Casserole Time - Bean & Turkey Hot Dish



My mother used to make this all the time back in the 80’s. It’s one of my absolute favorite comfort food dishes. The book I got the recipe from was one she used for years (The New American Diet) – she gave my sisters and I each a copy back in the early 1990's. I normally try to make a double batch of this so I can keep one in the freezer for a fast school night dinner. This is so yummy - I usually eat left overs by scooping up the mixture with saltines (and typically standing up in the kitchen next to the sink, don't ask me why, I just do).

 


Bean & Turkey Hot Dish
1/2 c diced onion
1/2 lb. ground turkey
1/4 c brown sugar
1/2 c ketchup
2 tbsp. vinegar
1 tbsp. prepared mustard
4 (16 oz. cans of beans - your pick). I used chickpeas, kidney, cannellini and butter beans

  • Preheat oven to 300' F
  • Fry off turkey meat and onion
  • Drain beans and mix remaining ingredients together
  • Add beans and other ingredients to turkey & onions
  • Move to a baking dish and bake covered in the oven for 1 1/2 hours (if you’re going to freeze one, you can omit this step and just put it straight in a casserole for the freezer)
