Flemington Grazing Trail & Cellar Door at Super Saturday

When food and racing come together I’m a very happy girl. This Saturday is not only one of the biggest racing days on the calendar at Flemington, but it’s also a chance to indulge in fantastic food and drink at the race course.

Saravia featured produce from Gippsland on the menu under the banner of ‘Farmer’s Daughters’. It was great to get an introduction to some producers I hadn’t come across before.

We started lunch with a salad of glistening preserved tomatoes which had been marinated in dill oil and were served with stretchy stracciatelli.

Fresh John Dory from Lakes Entrance was drizzled with buttermilk giving the fish a creamy taste and texture.

Where Saravia really shines though is behind the grill. He had a charcoal grill in operation for the lunch where he cooked beef oyster blade on the bone with a smoky char. 

Slow cooked lamb shoulder.

The highlight was the 12 hour slow roasted lamb shoulder which we cut with a spoon. It was teamed with Argentinian chapa bread which was puffy and salty. To finish there was a dessert of sharp yoghurt with crumbles of honeycomb, plums and shards of salted hazelnut praline. The combination of sweet and sour with different textures worked really well.
