Chocolate Peppermint Coconut Oil Fat Bombs

Fat bombs. They sound terrible right? Who wants to have Fat Bombs – let alone Coconut Oil Fat bombs? Well, let me tell you they are delicious and so GOOD for you!

Years ago, I stayed away from fat. I ate a low-fat diet thinking that was the best way to stay thin and healthy. Boy, was I wrong!

I had horrible menstrual cramps and migraines that time of the month. I was fatigued – even though I was in my 20s. I always felt hungry and craved carbs. I had brain fog. I was cranky and moody. The list goes on and on.

I avoided fat thinking it was the best way to stay thin. Turns out I was wrong. Low-fat diets are usually higher in sugar – which explained my constant craving for carbs – and wreak havoc on the body. The body needs fat to function properly, to stabilize moods, to boost energy, and to feel satiated.

So yeah, I gave up low-fat foods and now I eat fat bombs. Well, Coconut Oil fat bombs actually. You see, coconut oil is fantastic for the body. Coconut oil has so many health benefits, and coconut oil helps you to lose weight.

This recipe is an easy way to get a daily dose of coconut oil in a candy-like treat that’s delicious and so filling. As soon as I have a sweet craving, I have one of these Chocolate Peppermint Coconut Oil Fat Bombs and I feel satiated all day long. Plus, each serving has 2 tbsp of coconut oil to help me burn more calories, increase my metabolism and curb cravings (so I eat less overall).

Yep, you read that right – a sweet treat that can actually helps to INCREASE metabolism and CURB my hunger cravings. Pretty amazing, right?

This recipe is inspired by my Paleo Peppermint Patties recipe. I got so many comments from my readers about how much they love it, but want a recipe that’s a bit easier to make. Well, you asked for it and you GOT it.

Where to Get Kitchen Pantry Essentials

Chocolate Peppermint Coconut Oil Fat Bombs

Prep Time: 60 minutes

Cook Time: 10 minutes

Total Time: 1 hour, 10 minutes

Yield: About 12 coconut oil fat bombs.

Serving Size: 1 fat bomb = about 2 tbsp

Ingredients

  • 1/2 cup organic extra virgin coconut oil
  • 1/4 cup cacao nibs or organic cocoa powder
  • 1 tbsp raw honey or organic maple syrup
  • 1/2 tsp organic vanilla extract
  • 3-4 drops Peppermint essential oils (where to buy)

Instructions

  1. Combine all ingredients except the Peppermint essential oil in double boiler.
  2. Turn heat on medium-low and stir mixture until melted. 
  3. Remove from heat and add Peppermint essential oil.
  4. Fill silicone mold with mixture - about 2 tbsp per mold. 
  5. Place silicone mold in the freezer and allow fat bombs to harden - about 1-2 hours. 
  6. Remove from freezer and enjoy. Store in the freezer (lasts longer) to enjoy as a delicious snack anytime.
