Air Fryer Baby Hasselback Potatoes

These Air Fryer Baby Hasselback Potatoes are a delicious side dish for busy weeknight dinners, holiday dinners, celebrations or potlucks. Crispy edges, tender in the center, and easy to dress up with your favorite toppings like bacon, sour cream, and cheese, these potatoes will be a new favorite side dish your family will love.

Are you getting bored with the same baked potatoes or mashed potatoes as your go-to side dish? These Air Fryer Baby Hasselback Potatoes are a tasty twist on a classic baked potato from Sweden.

They’re thinly cut but not all the way so they’re connected at the bottom, like accordion potatoes, which makes the edges crispy while the center of the baby potatoes are tender. It’s got crispy edges like French fries, but more versatile like a baked potato where you can add different toppings.

Why You’ll Love This Recipe

  • Healthier option: They’re not deep fried or drenched in oil like French fries, but still have a crispy skin and edges that taste similar without the guilt.
  • Simple ingredients: This recipe is made with just 6 ingredients that you likely already have in your kitchen. But the presentation will be a fun way to serve up potatoes that will be hit with your family and guests.
  • Air fryer: Cooking these potatoes in the air fryer will make a crispy skin while center stays tender. It’s one of the reasons why I love using air frying. With minimal oil, the heating element in the air fryer blows hot air on the potatoes to cook it quickly and make it crispy. No more deep frying, no more oil splatters, no more mess. It’s such an easy way to cook and faster too. In addition, you it’s more hands-off because you don’t need to watch it cook over a stove. You can prep side dishes or do other meal prep while it’s cooking.
  • Minimal prep work: All you need to do is mix the ingredients together and then place them on the air fryer basket for a quick cook.
  • Customize the seasoning: This simple recipe uses just salt, pepper, and garlic powder, but you could use your favorite seasoning blends to customize the flavor to suit your taste.

About the Ingredients

It doesn’t take much to cook these delicious hasselback potatoes. All you need is 6 simple ingredients.

  • Baby potatoes: Opt for baby golden potatoes.
  • Olive oil: Use a cooking oil with a higher smoke point to air fry like olive oil.
  • Butter: Use butter to add a delicious flavor to these potatoes.
  • Seasoning: Use a combination of salt (sea salt or Himalayan salt), pepper, and garlic powder.

Step by Step Directions

These crispy Air Fryer Hasselback Potatoes are so easy to make. Just be sure to watch the cooking times as it can vary depending on the size of your potatoes.

  1. Rinse the potatoes to remove dirt and debris. Pat dry with a paper towel.
  2. On a cutting board, use a sharp knife to cut thin slices perpendicular to the length of the potato 3/4 of the way deep. Do not cut all the way through.
  3. Drizzle the potatoes in oil, and place them in the air fryer basket. Be sure the bottom of the potato (where it’s not cut) is sitting on the air fryer basket so the sliced part of the potato will crisp up. Sprinkle salt, pepper, and garlic powder.
  4. Cook in the air fryer at 400° for 10 minutes. When done, the potatoes will shrink in size  and the slices will open slightly.
  5. In a saucepan, melt butter and then brush on potatoes. Coat inside the slices well.
  6. Cook in the air fryer another 5-8 minutes until fully cooked. Potatoes should be crispy on the outside edges, but tender enough for a fork to go through. h
  7. Remove potatoes and plate. Add your favorite toppings like bacon bits, sour cream, chives, green onions, etc. Serve with your favorite main dish.

Substitutions and Variations

  • Potatoes: Use baby red potatoes or mini potatoes. You could use full-size potatoes of any variety like Russet potatoes, Yukon Gold potatoes, or even sweet potatoes. Just adjust the cooking time as needed to cook longer.
  • Oil: Use avocado oil or other neutral oil instead of olive oil.
  • Seasoning: Use just salt and pepper as the base for this recipe. You could add seasoning such as onion powder,
  • Butter: Use garlic butter and omit the garlic powder, or for a dairy-free option use vegan butter instead of regular butter. Or omit the butter altogether and add 1-2 tablespoons more olive oil.
  • Toppings: Use this recipe as a starting point to add your favorite toppings like bacon, chopped rosemary, minced garlic, cheese, etc. Sprinkle the toppings once the potatoes are done and air fryer them for an additional 2-3 minutes.
  • Garnish: Add a dollop of sour cream and fresh chives or green onion for a modern twist on a loaded baked potato. Or simply sprinkle fresh parsley for a final garnish.
