Sausage is a processed meat so be careful, buy good quality. Saute in a stainless steel pan with a little water to help take out some of the liquid and fats. Set aside.

Clean the mushrooms, regular button or portabello mushrooms will work great. Cut these into quarters. I like these a little larger on the fork because of the flavors. Add to your pan or skillet.
Onions Any onions will work. Red onions add a nice color. Remember to cut them small and let sit for 20 minutes or more to let the flavor soften. When the mushrooms are sizzling and them to pan.
It’s time to crack the Eggs Of course use the best quality these are pasture-raised, but whatever works for you. I’m using 3 large eggs and 2 medium for an 8-inch skillet. Add your favorite herbs & spices.

- A little salt about an 1/8th of a teaspoon
- Triple Seaweed Seasoning 3/4th of a teaspoon
- All purpose salt-free 1 teaspoon?
- Organic Pepper finely cracked 1 teaspoon
Add the seasonings to the eggs and lightly beat with a fork until they are almost but not pureed. set aside
Add the sausages and stir.
Clean and cut the spinach to the size you like and add on top.
let cook for about a minute and stir.
Add about a tablespoon of parmesan cheese and then pour in the eggs and seasoning mix.
Pop this into the oven for about 25 to 35 minutes or when the center rises.
