Savory Crock Pot Breakfast Casserole

Nothing says comfort food better than this Breakfast Casserole from Holly Clegg’s Crock Pot Convenience Chapter in KITCHEN 101 – the perfect blend of savory brunch flavors! Wake up and let this cheesy, hearty crock-pot breakfast cook itself. Slow cooker recipes can include a satisfying breakfast casserole! Best of all, frozen tater tots make it super easy! I like the natural sweetness of sweet potato tots, but original tater tots may be used as well.

Crock Pot Breakfast Casserole
Wake up in the morning to this fabulous one-pot breakfast with sweet potato tater tots, ham, onion, and green pepper.
    Servings8 (3/4-cup) servings
    Ingredients
    • 1pound frozen sweet potato crisp bite size puffstater tots
    • 1 package Canadian bacondiced, 6-ounce
    • 1 onionchopped
    • 1 green bell pepperseeded and chopped
    • 1 1/4cups shredded reduced-fat sharp Cheddar cheese
    • 4 eggs
    • 3 egg whites
    • 1/2cup skim milk
    • salt and pepper to taste
    Instructions
    1. In 3 1/2-6-quart slow cooker, insert plastic liner, if desired. Depending on size of slow cooker, layer tater tots, Canadian bacon, onion, green pepper and cheese two or three times.
    2. In bowl, whisk together eggs, egg whites and milk. Season to taste. Pour egg mixture over layers in slow cooker. Cook on LOW 5-8 hours or until egg mixture is set.
