Pesto Potatoes Make Perfect Side Dish to Any Entree

Pesto sauce is one of those delectable savory sauces that really does go well on just about anything. From chicken, to pasta even pizza, and especially these easy 3-ingredient Pesto Potatoes from Holly Clegg’s Guy’s Guide to Eating Well cookbook they have so much flavor, they make the perfect side to just about any entree!

Pesto Potatoes
Probably the easiest potato dish and best potato dish ever. Three-ingredient amazing crispy oven roasted potatoes tossed with pesto and Parmesan Cheese.
    Servings6 (1-cup) servings
    Prep Time10 minutes
    Cook Time25-35 minutes
    Ingredients
    • 2pounds red potatoesquartered
    • 2tablespoons basil pestofound in jar
    • salt and pepper to taste
    • 3tablespoons grated Parmesan cheese
    • salt and pepper to taste
    • 3tablespoons grated Parmesan cheese
    Instructions
    1. Preheat oven 400°F. Line baking pan with foil and coat with nonstick cooking spray.
    2. In large bowl, toss potatoes and pesto. Transfer potatoes to prepared pan. Season to taste.
    3. Roast 25-35 minutes (depending on size) or until crisp tender. Sprinkle with Parmesan cheese evenly over the potatoes. Continue roasting another 3-5 minutes or until cheese is melted.
