I love peanut butter. Seriously. Anything with Peanut Butter in it brings me joy…gosh Pinterest The boards are flooded with peanut butter recipes.
However, for years now, peanut butter and I have been on a break. At least the real deal. This original, heavenly, creamy, nutty deliciousness… I just can’t. I have no control over the spread. I can plow through a jar in record time.
Instead of trying to limit myself to regular peanut butter, I found an alternative. What I can definitely do and continue to do is enjoy peanut butter powder. Whether it is so PB2 (my original favorite) or one of the flavors from MyOatmeal.com. These powder alternatives have definitely helped me eat healthy and still enjoy the taste of peanut butter.
I also find that peanut butter powder is very easy to make. These pancakes for example…
Yes, these pancakes have all the peanut butter flavor of the real thing, but a whole lot fewer calories. I was experimenting over the weekend and came up with this recipe that produced fluffy, thick and delicious pancakes to add to the rotation. Yummy!
Peanut Butter Banana Pancakes
For 1 person
INGREDIENTS
1 banana
2 TBSP. PB2
1/3 cup Bisquick Heart Smart Baking Mix
3 TBSP. skimmed milk
1 packet of Truvia sweetener
INSTRUCTIONS
1. Mix all ingredients in a small bowl until smooth. Note: The banana I used was frozen and then thawed, hence the color.
2. Heat a skillet to medium heat. Coat with cooking spray. Note: I use this Perfect pancake pan. Love it!
3. Form pancakes and cook until bubbles form on top of pancakes and edges begin to form. Turn and cook until the pancakes are done. Be careful not to burn the pancakes.
4. Serve with 1/4 cup sugar-free maple syrup and enjoy!
