If you’re looking for a delicious dairy-free green bean casserole for Thanksgiving, you’ll love this Vegan green bean casserole. It’s still creamy and delicious while being completely vegan.

There are so many reasons why you need some vegan options at Thanksgiving dinner. Maybe you went vegan this year or have a few friends or family members who follow a plant-based diet. If that’s the case, you can still serve your favorite dishes, but with a few changes. Everyone is sure to fall in love with this flavorful vegan Green Bean Casserole recipe.

Instead of cream of mushroom soup, use fresh mushrooms, flour, and non-dairy milk to make a creamy mushroom sauce for the Green beans. Luckily, the classic French fries with crispy onions are already vegan, so you don’t have to make them yourself!

Ingredients you need

  • Green beans: We like to use fresh green beans, but you can also substitute frozen green beans. Canned green beans work too. But be sure to read the recipe notes as the method changes slightly.
  • Mushrooms: I used baby portobello mushrooms, but cremini or white button mushrooms would also work.
  • Non-dairy milk: To make this dairy-free green bean casserole, consider using a dairy-free milk – I like soy milk or cashew milk. Just make sure it’s flavorless and unsweetened!
  • Vegan butter: We like to use a little vegan butter for the mushroom cream sauce for this casserole, but you can also replace it with olive oil if you prefer.
  • All-purpose flour: You will need some flour to thicken the mushroom sauce.
  • French fried onions: The French brand of crispy fried onions is already vegan, so you definitely need to swap things out here!

How to make a vegan green bean casserole

Steam green beans: Place the green beans in a pot fitted with a steamer basket and steam until tender, about 5-7 minutes. You can also do this in the microwave – simply place green beans in a microwave-safe bowl, add 2-3 tablespoons of water, cover with a plate and microwave for 4-6 minutes.

Make a Creamy Mushroom Sauce: In a large ovenproof skillet over medium-high heat, melt the butter and sauté the chopped mushrooms until soft. Stir in garlic and flour and cook for 1 minute. Stir in milk, broth and soy sauce. Bring to a boil and cook until slightly thickened.

Combine and bake: Stir in the steamed tender green beans and ⅓ cup of the fried onions. Sprinkle remaining fried mushrooms evenly over top. Bake at 400 degrees Fahrenheit for 11-15 minutes or until bubbles form. Allow to cool for about 5 minutes before serving.

Recipe notes:

  • Make it gluten free: For the mushroom sauce, use gluten-free flour or cornstarch instead of all-purpose flour, tamari instead of soy sauce, and buy a gluten-free brand of French fried onions.
  • How to Use Canned Green Beans: If you are using canned green beans, you can skip the steaming step. Make sure you drain them well.
  • Go on: Prepare the green bean casserole until ready to bake, but do not add the fried onions on top. Place the casserole filling in a bowl or simply cover the pan with plastic wrap and store in the refrigerator until ready.
  • Recipe for one pan: If you have an oven-safe skillet or cast iron skillet, you can do stovetop and oven cooking in the same bowl. However, if you don’t have an oven-safe pan, place the green bean mixture in an 8×8 inch baking dish, top with the fried onions, and bake.

  • How long does green bean casserole last in the fridge? You can store the cooked green bean casserole covered with plastic wrap or in an airtight container for 3-4 days.
  • How to freeze green bean casserole: Transfer the finished casserole to an airtight container and store in the freezer for up to 3 months. Thaw in the refrigerator overnight before reheating.

Yes! You can make green bean casserole using canned green beans. (In fact, my husband prefers the canned beans.) Simply drain the green beans well and skip the steaming step in this recipe since they don’t need extra cooking to be tender.

Yes! Frozen green beans work very well for green bean casserole. You don’t need to thaw them either – just throw them in the steamer or microwave before adding them to the mushroom cream sauce.

  • Preheat the oven to 350 degrees Fahrenheit.

  • Place the green beans in a pot fitted with a steamer basket and steam for 5-7 minutes or until tender.

  • Melt butter in a large skillet. Add mushrooms and cook for 5 minutes. Add the garlic and cook for another minute.

  • Sprinkle flour evenly over the mushrooms and stir until the flour is no longer dry. Add milk, broth and soy sauce. Simmer gently for 5 minutes until slightly thickened

  • Stir in the steamed green beans and 1/3 cup of the fried onions. (If you don’t have an oven-safe pan, place in an 8×8 baking dish.) Place the rest of the onions on top in a layer. Bake for 11-15 minutes or until bubbles form. Allow to cool for 5 minutes before serving.
