Holy, wow. I just had breakfast… and I’m officially in love.
I’m already planning how I’m going to eat it tomorrow and setting aside time today to get ingredients so I can play around with new flavor combinations.
The end result: A fluffy, satisfying pancake that you can enjoy with your favorite toppings!
Deep dish pancakes

For 1 person
INGREDIENTS
1/3 cup flour
1 TBSP. Oats
1 teaspoon. ground flax
1 teaspoon. baking powder
Pinch of cinnamon
pinch of salt
1/3 cup and 1 tbsp. skimmed milk
INSTRUCTIONS
1. Mix all dry ingredients in a bowl.
2. Then add the wet ingredients and stir until well combined.
3. Place the dough in a microwave-safe bowl that has been sprayed with cooking spray.
4. Cook your pancake in the microwave for 90 seconds until done.
5. Top with your favorite toppings and serve! I enjoyed my first Deep pancake with PB2 and a sprinkle of sugar-free syrup. I would like to try PB2 and banana, maybe with some chia seeds. And I also have my eye on PB2 and Schatz. Yummy!
