Lightened Asiago Baron Verulam Chive Scone


I had so much fun reviewing my trip to Chicago with you this week. It was so much fun and I already miss these ladies and our adventures!!!

One of my favorite parts of the trip were the quiet mornings. The weather was incredible (in the 80s most days) which made the mornings cool and cozy. Laurel lives downtown and we went to the local stores every morning in search of caffeine. My favorite place was Baker and Noshespecially for their savory scone.

I picked this guy up…asiago, bacon and chive scone and OMG. I tried my best to eat slowly…because I wanted it to last forever. And I swore I would try to recreate them at home. Saturday morning I did exactly that!!

I used all lightened ingredients and tried my best to serve the same flavors at a fraction of the calories. Bisquick for a healthy heart, Laughing Cow Cheese, bacon in the middle and skim milk, to name a few of the alternatives I used. Important note: You can always double or quadruple this recipe depending on how many you are serving! For me, a portion for one person was perfect for a Saturday morning…

The end result was INCREDIBLE and transported me back to Chicago and that wonderful weekend. If only my ladies were here to enjoy it with me…

Lightened Asiago Bacon Chive Scone

Inspired by Baker and Nosh

For 1 person

INGREDIENTS

1/2 cup Bisquick Healthy Heart baking mix

1 piece of Laughing Cow Cheese – creamy Asiago flavor

Cut 1 strip of bacon in half

2 TBSP. skimmed milk

1+ tbsp. chopped chives

freshly ground black pepper

pinch of salt

INSTRUCTIONS

1. Preheat your oven to 350 degrees.

2. Prepare the bacon on the stove, microwave, or oven. However, you want!

3. Chop the chives and place in a medium mixing bowl. Note: I always use kitchen scissors to cut chives.

4. Add your cake mix, cheese slice and milk. Add salt and pepper. Mix all ingredients with a fork to form a dough.

5. Roughly chop the bacon and add it to the dough.

6. Here comes the fun part: it’s time to shape your scones. I did my best to shape it into a square shape and then cut it diagonally to form two triangles.

7. Place on a baking tray lined with baking paper. Bake for 10-12 minutes until starting to brown.
