BLT waffle sliders with guffawing cow cheese


The idea to try this dish came to me from here Heather. She posted on Instagram a few weeks ago that her lovely husband made her a multigrain waffle BLT for dinner after a big race. Ever since I saw the picture, it’s been ingrained in my brain… and on my list of dishes to make.

I did it on Saturday evening. I jumped in feet first and made what I think was officially my favorite sandwich on the planet. To be honest, I’m not a big fan of sandwiches. Most of them have lunch meat on them, which is just gross. I eat a BLT and I eat a vegetable, but there’s not much in between that makes my taste buds dance.

Oh, but they danced when they ate this sandwich… and yours will too!

The fluffiness of the waffle pairs PERFECTLY with crispy bacon, juicy tomatoes, creamy Laughing Cow Cheese and crunchy vegetables. While I paired my BLT with Garlic Herb Laughing Cow Cheese, you can use any other flavor of the cheese if desired.

BLT waffle sliders with laughing cow cheese

For 3 people

INGREDIENTS

1 cup low-fat Bisquick mix

1 large egg

1 TBSP. oil

1/2 cup milk, more as needed

2 Roma tomatoes, sliced

9 slices pre-cooked bacon

3 wedges Laughing Cow Cheese – garlic and herb flavor

salt and pepper

INSTRUCTIONS

1. Mix Bisquick, egg, oil and milk with a whisk. Note: The batter will be thick, but add more milk if you have difficulty mixing the ingredients together. I added about 1-2 tbsp. more.

2. Bake your waffles according to the instructions in your waffle iron. The dough should make 3 small waffles.

3. Slice your tomatoes and cook the bacon according to package directions.

4. Take one of your waffles and break it into four pieces. While still warm, spread each quarter with your slice of Laughing Cow Cheese.

5. Next, assemble your sandwich: vegetables, then tomatoes (with salt and pepper) and 3 slices of bacon.

6. Bring out your sliders and get excited!
