Pumpkin spice pancakes

This morning I woke up in a winter wonderland. I think the great thing about snow is that it comes silently at night. You hear rain falling, but snow… it sneaks up on you and covers the ground quite nicely.

Knowing it might snow today, I did a bunch of my Christmas shopping last night. I plan on wrapping them up and wrapping them up today! Since my entire family is spread across the country, I have to ship everything. Early shipping is important to avoid lines and headaches, so I always try to do that.

I also finished my Christmas tree last night. I searched all over town for a tree skirt to match my fancy tree. I chose one from Target. I think it will work this year, but I’ll try to think of something cleverer for next year…

Even though I did some Christmas shopping last night, I didn’t make it to the supermarket today or plan breakfast. I don’t really like many breakfast foods and am determined to find some variety in my morning meals. Today I decided to try a new recipe from SkinnyTaste Pumpkin Spice pancakes!

Pumpkin spice pancakes

Adapted from Skinny button
For 2 people
INGREDIENTS
1/2 cup whole wheat flour
1 teaspoon. baking powder
1/8 tsp. Salt
1/4 tsp. Cinnamon
1/4 tsp. Pumpkin pie spice
2 TBSP. Canned pumpkin
1/2 tbsp. Brown sugar
1/2 cup skim milk
3 TBSP. Egg beater
1 tsp vanilla
Butter flavored cooking spray
I can’t believe it’s not butter spray
Mrs. Butterworth’s Sugar Free Syrup

INSTRUCTIONS

1. Mix all dry ingredients in a bowl.

2. Place milk, whisk and canned pumpkin in a bowl and stir until smooth. Combine the wet ingredients with the dry and mix well with a spoon until there are no dry spots left. Don’t mix too much.

3. Heat a large skillet over medium heat. Spray oil to lightly coat and pour in 1/4 cup pancake batter. When the pancake bubbles and the edges become firm, flip the pancakes over.

4. Repeat with the remaining dough. The serving size is 2 pancakes. Spray with I Can’t Believe it’s Not Butter and top with sugar-free syrup.

Recommendation: Do not pair with a Morning Star Farms sausage patty. GROSS. I won’t eat these again
