Baked maple donuts

Oh my God, my dears… I have something very special for you today. First, I would like to introduce you to Katie.

Katie is the voice behind one of my favorite cooking blogs – The Dashing Dish. If you’ve never read Dashing Dish, you should definitely check it out. Katie creates truly amazing low calorie and flavorful meals. She shares the most beautiful images of her creations and often shares delicious milkshakes, decadent dinners, and delicious dessert options. She is also the creator of the amazing recipe that I am sharing with you today.

This is actually the 2ndnd The recipe for a fancy dish that I shared on No Thank to Cake. The first was for an incredibly delicious stack of peanut butter pancakes! These pancakes and these donuts have some common ingredients (egg white, coconut flour). So if you haven’t tried them yet, now you have the perfect excuse.

Did I mention we are about to make 72 calorie donuts???? And of all the flavors…Katie chose Maple. For this reason alone, you need to add Dashing Dish to your Google readers as soon as possible.

Maple donuts are pretty much my favorite pastry ever. Seriously. So serious that I could have easily called this blog “No Thanks to Maple Donuts.” That sounds terribly wordy, though.

These grain-free babies don’t need to be fried, but they do require a fancy pan. In reality…. I’m always looking for new kitchen items. This recipe was just a good excuse for me to add a donut pan to my collection of gadgets and whatnot.

During a quick shopping trip this weekend I happened upon a Sur la Table that had this little guy available for my shopping pleasure. It was $10 and now I’ve tried the donuts. VALUE. EVERY. PENNY. I also spotted one of these pans at Target yesterday… $13. Wherever you get one, get one!

Ok, I’m pretty sure you’ve waited long enough. It’s time to make the donuts!

Baked Maple Donuts (Grain-Free)

From The Dashing Dish

For 6 people

INGREDIENTS

½ cup coconut flour

½ tsp. baking powder

1/8 tsp. Salt

1 whole egg

2 egg whites

2 TBSP. Low sugar maple syrup or honey

1 teaspoon. Maple extract

2 TBSP. unsweetened apple sauce

½ cup skim milk or milk substitute of your choice

12-15 packs of stevia or ½ cup of sweetener of your choice

Optional maple glaze

¼ Ideal powdered sugar or regular powdered sugar

¼ tsp. Maple extract

1 teaspoon. Water (add 1/8 tsp more water as needed)

INSTRUCTIONS

1. Preheat oven to 350 degrees. Spray a donut pan with cooking spray.

2. In a medium bowl, combine the dry ingredients.

4. In a separate bowl, mix together the wet ingredients.

5. Combine the wet ingredients with the dry and stir until the dough is smooth and lump-free.

6. Divide the dough evenly between the 6 donut tins. Bake for 20-25 minutes, or until toothpick comes out clean and donuts are set.

7. Meanwhile, to make the glaze, stir together the powdered sugar, maple extract and water in a small bowl until smooth. Note: I found the “ideal” powdered sugar at Whole Foods. It is made from stevia. It’s a bit pricey but I thought I’d give it a try.

8. Using half a teaspoon, spoon the glaze over each donut. Enjoy!

My review of these donuts: Um, they are insanely delicious! In the end, they are the juiciest donuts I have ever eaten. It could be the applesauce or the absorbent properties of the coconut flour. Whatever it is, it’s great. The coconut flour does give them a slight coconut flavor, but what you mainly taste is the maple flavor of the O’s. I also glazed half of the donuts and left the other half dry. Next time I’ll glaze them all (because I like glaze), but they taste just as delicious without it. Conclusion: These little guys are delicious. For someone who hasn’t had a donut in almost two years, it was a real treat and really tasty!

I’m still thinking about changing the name of the blog. It could happen… 🙂
