Peanut butter pancakes

Yes, you read it correctly. PEANUT. BUTTER. PANCAKES.

Since I found the amazing Dashing dish website, I have my eye on these pancakes. BUT they contained two ingredients that I rarely have at home:

#1 – Protein
#2 – Coconut flour

Honestly, I didn’t know there was such a thing as coconut flour. I didn’t know it was a gluten free alternative either! What I do know is that it comes in a cute little container and you can buy it at Whole Foods.

I also loved that this recipe was like that Peanut Butter powder! I have used PB2 It took a long time as a spread, but as an ingredient it’s great and so delicious in this recipe.
Without further ado, I bring you the tastiest pancakes I’ve eaten in a long time! Even though I really enjoyed the pumpkin spice pancakes I posted a few weeks ago, peanut Butter is always better than pumpkin spice. Me and PB have been friends for WAY too long for PS to win a competition like this.

Peanut butter pancakes

Out of Dashing dish
Serves 1 (makes about 8-10 small pancakes or 4 large pancakes)

Note: I made half of the recipe to reduce calorie intake and I felt there were enough pancakes. If you choose the full recipe, you’ll get 330 calories or 6 Weight Watchers Plus points.

INGREDIENTS
5 tbsp. coconut flour
1/4 tsp. baking powder
2 TEA SPOONS. peanut butter or 2 tbsp. PB2 powder
1-2 packets of Truvia or other sweetener
7 egg whites
small pinch of salt
1/4 cup – 1/2 cup water
INSTRUCTIONS
1. In a medium bowl, combine all the ingredients except the water and start mixing. (It will be very lumpy/thick at this point…don’t worry!)
2. Slowly and gradually add water and stir until a thick pancake batter forms (you can also easily mix the ingredients with a mixer, hand mixer or immersion blender!) *Note: The batter will do this thicker than typical pancake batter, but still “thin” enough to pour into a hot pan!
3. Meanwhile, heat a nonstick griddle (or nonstick skillet) coated with cooking spray over medium-high heat. Place about 1/4 cup batter per pancake on the griddle. Flip the pancakes over when the top is covered in bubbles and the edges look cooked.
4. Serve warm with sugar-free syrup and I Can’t Believe It’s Not Butter spray.
