Turkey burgers full of prosciutto, sun-dried tomatoes and spinach

I follow a lot of people I admire on Twitter. I follow some of my favorite healthy living bloggers and some of THEM who read and support NTTC (xoxo!!!). I follow all of my Cosmo Radio personalities and I follow many of the Biggest Loser contestants from the past.

I’ve blogged about my adoration a few times Hannah Curlee And Olivia Ward from Season 11 of Biggest Loser. LOOOOOOOVE these ladies. They are so fabulous and inspire so many. How could you not just worship her?

I’m also following from the same season Courtney Crozier. She has such a great spirit. She is beautiful – inside and out! I love her energy and positive attitude. Like Hannah and Olivia, Courtney provides the weight loss community with a source of inspiration and shows that hard work will pay off.

Last week Courtney tweeted the following:

@BL11Courtney: Turkey burger stuffed with spinach, laughing cow and turkey bacon and thinly loaded baked “potato soup” to celebrate was a success! Less than 350 calories!

Wow…stuffing a turkey burger with Laughing Cow cheese?? I had never thought of that before. And from there the wheels started turning…

Turkey burgers stuffed with prosciutto, sun-dried tomatoes and spinach with laughing cow cheese

For 1 person

INGREDIENTS

1/4 pound Jennie-O 93/7 ground turkey

1 TBSP. Sun-dried tomatoes, sliced

1 slice of ham, cooked and chopped

5 spinach leaves, chopped chiffonade style

1 wedge Laughing cow cheese with garlic and herb flavor

1 Wonder Wheat hamburger bun with 80 calories

Onion, diced

roasted garlic

thinly sliced tomatoes

5 spinach leaves

INSTRUCTIONS

1. Cook your prosciutto slice in a skillet sprayed with cooking spray. Once they are crispy, remove and chop. Add the onions and garlic to the pan and sauté until the onions are browned and cooked through.

2. Chop all the filling ingredients: sun-dried tomatoes, onions, garlic, spinach and prosciutto.

All my delicious ingredients

3. Place ground turkey in a small bowl. Add a few onions/garlic and add salt, pepper and garlic powder if desired.

4. Slice the Laughing Cow cheese horizontally. Place half of the cheese in the center of the burger. The other half of the cheese will be spread on your bun.

5. Take half of the turkey meat and form it into a burger. Start with the toppings, starting with the cheese and tomatoes.

6. Then add the ham pieces. Note: turkey bacon would also work well.

7. Add the spinach.

8. Take the remaining turkey meat and cover the top of the burger. Seal the edges with the turkey to prevent the spinach and cheese from escaping.

9. Prepare a grill pan or skillet with cooking spray. Cook the burger until browned and done. Since it’s a thicker burger, I cooked it a little longer to make sure it was cooked through (about 8 minutes, but watch yours!)

10. Lightly toast the bun and spread with the remaining Laughing Cow cheese. Top with spinach and thinly sliced tomatoes.

11. Top your bun with your delicious burger. And prepare for a WOW experience.

I paired my burger with roasted Brussels sprouts…

Since this burger was SO pretty and delicious, I thought you could use a few more pictures of what you’ll be making when you make your own.

This is what it looks like when you cut it open.

And you can eat the other half too!!!

Holy Hannah…I see more stuffed burgers in the future!
