Beat The Heat With Home-Made Ice-cream. Summer vacations are on! And, there is nothing much to do except figuring out how to keep the little ones preoccupied. DesiDieter experts are mums with naughty children themselves. This is how they are keeping themselves cool and the kids busy this summer, making ice-cream. Two frugal investments were made this summer: an ice-cream maker machine and a Lolly Pop Mould. Healthy recipes are easy to find, thanks to the Google Guru . The plan is to keep the ice-creams as healthy as possible. And, two versions can be made; a low calorie for the adults (with less sugar and no cream) and a high calorie for the hyper yet petite tweens. The Diet Expert Tina Khanna, loves beetroot and is going 'gaga' over all culinary possibilities with this root delight. We licked iced beets this summer. How was it made? Very simple. Fresh beets to be nicely washed to get all the dirt off. Scrape the peel with a fine scarper. Chop and blend the beets with water. Strain the juice and leave the pulp aside. To make beet ice-lollies: add honey to the strained beetroot juice, a pinch of salt and freeze in the lolly pop mould. Voila! Your kids will get their tongues purple and you won't mind it for sure. For the low calorie version the honey was added with constraint. To make beet ice - cream: Primary ingredient is coconut milk which was made at home. It is so simple to make coconut milk at home. Simple, bend grated coconut in water in small batches. Strain the milk. This home-made coconut milk was heated on low flame with the beetroot extract leftover from straining juice. The mixture was constantly stirred until thick. A little sugar added and a teaspoon of vanilla custard powder for thickening. After cooling the blend the mixture was poured in to an ice-cream maker for whipping. Freeze and whip again. Freeze and whip again whew, the noon went away quietly as we all were busy making ice-cream. You can add a bit of heavy cream for you children if required.
