Peppermint Icebox Cake

A simple recipe made with homemade peppermint candy whipped cream and everyone’s favorite chocolate sandwich cookies, it’s a dessert that’s festive, fun and irresistibly creamy. I have shared an Icebox Cake recipe for just about every other season on the blog so why not make one that simply screams “Happy Holidays” as well!? Say hello to this oh-so-festive, beautifully fluffy and irresistibly creamy Peppermint Icebox Cake!

I am a big-time sucker for peppermint anything this time of year but pair peppermint with chocolate or chocolate sandwich cookies… have mercy. (I can’t be 100 percent certain, but I’m fairly confident this dessert would, in fact, warrant a “have mercy” from Uncle Jesse if he tried it.)

Last year I shared my family’s favorite Oreo Peppermint Ice Cream Dessert with you guys and absolutely loved seeing so many of you make it for holiday gatherings throughout December. I hope you guys love today’s recipe just as much because it’s another one I feel confident will help put you in the holiday spirit and make your taste buds want to do the jingle bell rock.

The base of this recipe is everyone’s favorite chocolate sandwich cookie layered with homemade peppermint candy Whipped Cream. As someone who thinks just about every dessert tastes better with whipped cream on top, a dessert that basically centers around whipped cream is right up my alley.

Like all of the other icebox cake recipes I’ve shared on this blog, this rendition is impossibly easy to make, so it’s the kind of dessert that will quickly become your BFF if you’re like me and like to check as many things as possible off your to-do list before a party or special holiday event. It needs to sit overnight, so throw this one together the night before guests arrive in town to celebrate the holidays with you or the evening before you have plans to head out to a holiday party with friends and family and feel yourself exhale with one less thing on your plate!

I grabbed everything I needed to make this Peppermint Icebox Cake from BJ’s Wholesale Club including the pretty lil’ dishes you see the cake resting on in my photos.

This Peppermint Icebox Cake combines two of the best flavors of the holiday season – peppermint and chocolate! A simple recipe made with homemade peppermint whipped cream and everyone’s favorite chocolate sandwich cookies, it’s a dessert that’s festive, fun and irresistibly creamy.


Ingredients

  • 3 cups heavy whipping cream
  • 1/4 cup finely crushed peppermint candies or candy canes
  • 1/4 cup + 2 tablespoons powdered sugar
  • Approximately 45 chocolate sandwich cookies (amount may vary slightly)

Instructions

  1. Pour heavy whipping cream into a chilled bowl and whip the cream on low, gradually adding powdered sugar until mixture begins to thicken. Take care not to over-whip or the whipped cream will become dense and lumpy. Fold in the crushed peppermint candies.
  2. Spread a layer of the peppermint candy whipped cream on the bottom of an 8×8 baking dish.
  3. Place 1/3 of the chocolate sandwich cookies on top of the layer of whipped cream. You may need to break a few cookies to get them to fit into your dish which is completely fine. Spread another layer of whipped cream on top of the cookies and repeat the layers until you have three layers, ending with whipped cream on top.
  4. Cover icebox cake and refrigerate overnight.
  5. Prior to serving, top with additional crushed cookies and peppermint candy pieces if desired. Enjoy!

Notes

If you prefer your cookies extra soft, dip each one in milk before placing on top of the whipped cream to soften them up a bit. As written, the cookies in this recipe still maintain a bit of a crunch which I love but if you prefer a softer cookie, definitely do the milk dunk!
