INGREDIENTS
For Chicken:
2 lb. chicken wings
2 tbsp. Vegetable oil
1 tsp. garlic powder
Kosher salt
Freshly ground black pepper
1/4 c. hot sauce (such as Cholula)
For Cauliflower:
1 head of cauliflower approx. 4 cups of florets
1/2 cup water
1/2 cup almond or soy milk
3/4 cup all-purpose flour
2 tsp garlic powder
1 tsp cumin
1 tsp of paprika
1/4 tsp salt
1/4 tsp ground pepper
For Buffalo Sauce:
2 cups Frank’s Hot Sauce
4 tablespoons Plant Butter (avocado oil base)
For Buttermilk Ranch:
2 cups Mayonnaise
125 g Buttermilk
1 ¼ cup Sour Cream
4 g chives
2 g dill
7 g dried Italian parsley
1 ½ teaspoons garlic powder
2 lemons, juiced
3 g kosher salt
4 g black pepper
Carrot sticks, for serving
Celery sticks, for serving
DIRECTIONS
For Buffalo Sauce:
1. In a small saucepan low heat, melt plant butter and mix in hot sauce. Remove from the heat just as it starts to melt. Stir together and set aside. There is enough sauce for the chicken and cauliflower.
For Chicken:
1. Preheat oven to 400° and place a wire rack over a baking sheet. In a large bowl, toss chicken wings with oil and season with garlic powder, salt, and pepper. Transfer to prepared baking sheet.
2. Bake until chicken is golden and skin is crispy, 50 to 60 minutes, flipping the wings halfway through.
3. Heat broiler on low. Transfer baked wings to a bowl and toss with half of the buffalo sauce until completely coated. Return wings to rack and broil—watching carefully!—until sauce caramelizes, 3 minutes.
For Cauliflower:
1. Line baking sheet(s) with parchment paper or grease very well with oil. Preheat your oven to 400-425 F depending on your oven.
2. Wash and cut cauliflower head into bite-sized pieces/florets.
3. Mix the milk/water/flour and spices in a medium mixing bowl (set aside the hot sauce and butter for later). Mix until the batter is thick and is able to coat the cauliflower without dripping.
4. Dip the cauliflower in the batter. You can do this one by one or in batches. shake off excess batter before placing cauliflower on the baking sheet. Lay the cauliflower single layer on the baking sheet.
5. Bake for 20 minutes until golden brown, flipping the florets over halfway through to get all sides golden brown and crispy.
6. Once the cauliflower is done its first bake in the batter, remove them from the oven and put all the baked florets into a mixing bowl with the rest of the buffalo sauce and toss to coat evenly. Return cauliflower to the baking sheet and bake in the oven for another 10-15 minutes or until reached desired crispness.
For Buttermilk Ranch:
1. In a medium-large bowl, take all ingredients and mix until well combined. Enjoy!

About Christy Carlson Romano:
Christy has been a working actress and singer since she was 6 years old. She moved to Los Angeles with her mother when she was 14 to star in the Disney Channel franchise, Even Stevens as Ren Stevens alongside Shia LaBeouf. Christy enjoyed many years with Disney gaining an Emmy nomination for her voice work as Kim Possible and starring on Broadway in Beauty and the Beast. She went on to balance her college career at Barnard College, Columbia University with filming movies for ABC Family including: ‘Campus Confidential’, ‘Taking Five’, ‘The Cutting Edge 2: Going for the Gold’, and ‘The Cutting Edge 3: Chasing the Dream’. Christy returned to Broadway in her mid twenties and learned to puppeteer in the Tony-Award winning ‘Avenue Q’. Christy was married to her husband on New Years Eve , 2013 in Banff, Canada after having met in a screenwriting class in college. She became impassioned with directing and made her debut in Lionsgate’s “Christmas All Over Again”. While she still works as an actress, she enjoys living in Orange County with her husband, Brendan Rooney, and daughters, Isabella and Sophia.
