1. Amla Ka Murabba
Indian gooseberry or amla is a super healthy ingredient. It is a rich source of potassium, magnesium, calcium, antioxidants, iron, vitamin A, C, fiber.

Ingredients for Amle Ka Murabba Recipe
- Amla – 1 kg
- Sugar – 1 1/2 kg
- Black cardamom seeds crushed 1 teaspoon
- Almonds blanched and slivered 10-15
- Few Saffron (kesar) strands
Sweet can be healthy when it is done with gooseberries! Boiled amla pieces are doused in sugar syrup and flavoured with cardamom.
How to make Amla ka Murabba
- Place Amla and 2 cups of water in a pan and cook for 10-15 min on low heat till amla becomes tender and water is reduced to half of initial quantity.
- Drain the amla segments, remove the seeds and reserve the rest.
- Now on a separate pan heat sugar with 1 1/2 liter of water. Heat it till it forms a syrup and sugar dissolves completely.
- Next Add amla and continue to cook. Add almonds, crushed black cardamom seeds and saffron.
- Continue to cook, uncovered, on low heat till the mixture is thick and translucent. The syrup by now should be of two-string consistency. Cool and store in airtight jars.
2. Gooseberry Rice with Raw Mango (Amla rice)
Rice mixed with exciting combination of amla and raw mangoes creates magic with its tangy taste.
Ingredients to make Gooseberry Rice with Raw Mango (Amla rice)
- 1 cup sona masoori Rice with 15 gooseberries (amla)
- 1 Tbsp channa dal 1 tsp urad dal 1/2 tsp mustard seeds Curry leaves
- 1 raw mango 1/4 tsp turmeric powder 10-12 green chillies
- 15 gms crushed cashews
- 2 Tbsp oil Salt to taste
How to make Gooseberry Rice with Raw Mango (Amla rice)
- Wash and soak rice for 10 to 15 minutes.Cook rice in draining method. Let it cool.
- Remove all seeds from gooseberries (amla) and cut them in fine pieces.
- Now Remove the outer skin of mangoes and cut them in fine pieces.
- Heat oil in a thick bottom pan and crackle mustard seeds.
- Add Urad dal, Channa dal and cashew nuts.Fry until they turn light golden.
- Slit green chillies into two pieces. Now Add slit green chillies, curry leaves and fry well. Add chopped gooseberries and raw mangoes, fry for 2-3 minutes.
- Then Add turmeric powder, salt and mix.
- Cover and cook on low flame for 6-8 minutes.Let the mixture cool.
- Add cooked rice to the mashed mixture and mix well.
- Season according to your taste.

3. Amla Chutney (Gooseberry Sauce)
Taste: Sour chutney with the goodness of amla, saunf (Anise) and bhrami leaves.
Ingredients for Amla ki Chutney
- 1 Tbsp oil
- 1 Tbsp saunf
- 1 cup boiled amla
- 1 tsp dhaniya powder
- 1 tsp red chilli powder
- 1 Tbsp ghee
- 1 tsp bhrami leaves
- Salt to taste
How to Make Amla Chutney (Gooseberry Sauce)
- Take a pan add some oil and sauf in it.
- Add boiled pieces of amla, dhaniya powder, red chilli powder and ghee.
- Cook for a minute. Now add salt and bhrami leaves. Let it cool.
- Blend it in a mixer and serve.
4. Sweet Potato Fries with Amla Aioli
Sliced sweet fries served with zingy dip.
Ingredients for Sweet Potato Fries with Amla Aioli
- 1 medium sweet potato
For the Batter:
- 2 Tbsp rice flour
- 2 Tbsp corn flour
- 30 – 40 ml club soda
- 1 big pinch Mexican chilli powder/ or any chilli powder
- Few leaves oregano
- 1 big pinch of salt
For the Dip:
- 2-3 Tbsp egg less mayonnaise
- 1/2 squeezed roasted garlic
- 1 Tbsp finely chopped shallots
- 3-4 pickled jalapenos
- 2-3 fresh basil leaves
- 1 Tbsp amla
- To season salt and pepper
- Few sprigs of thyme
- 1 1/2 tsp jalapeno juice
How to make Sweet Potato Fries with Amla Aioli
- Wash the sweet potato to get rid of any soil.
- Slice fairly thin into a bowl of chilled water. In a stainless steel or glass bowl, whisk all the ingredients for the batter.
- Set aside some of the rice and corn flour mixed with salt, pepper, Mexican chilli powder and oregano to dredge the sweet potatoes.
- Drain the sweet potato and pat dry. Dredge them with the flour mix, dip in the batter and deep fry in hot oil.
- Blend all the ingredients for the dip together in a bowl.
- Chill and serve with the chips.
5. Amle ka Achaar (Gooseberry Relish)
A sweet and sour pickle made with gooseberries.
Ingredients for Amle ka Achaar (Gooseberry Relish)
- 1 kg amla
- 350 gm salt
- 240 gm/1 cup sarson ka tel (mustard oil)
- 1 Tbsp sarson (mustard seeds)
- 1 Tbsp chilli powder
- 2 Tbsp heeng (asafoetida)
How to Make Amle ka Achaar (Gooseberry Relish)
- Boil the amla till the skin looks tender (about 15 minutes).
- Leave to drain in a colander till all the water drains out.
- Heat some oil and add the mustard seeds, heeng and chilli powder.
- Mix well and add the amla and salt.
- Stir fry till it’s mixed well and the amlas are completely coated with masala.
- Cool and store in a clean jar.

6. Amla Aur Beetroot ki Tikki
Ingredients for Amla ki Tikki
- 5 to 6 amlas (indian gooseberries) , grated
- 1 cup boiled and mashed beetroot
- 3 potatoes , boiled , peeled and mashed
- 1 tbsp oil
- 1 onion , finely chopped
- salt to taste
- 1/4 tbsp red chilli powder
- 1/4 tbsp garam masala
- 1 tbsp lemon juice
How to make Amla aur beetroot ki Tikki
- Heat the oil in a broad pan and add the onion and sauté till lightly browned.
- Add the beetroot and salt, mix well and saute for more 4 minutes or till the mixture becomes dry.
- Now add the chilli powder and lemon juice and mix well.
- Add the potatoes and amla, mix well and refrigerate for 1/2 hour.
- Divide the mixture into equal portions and make small flat tikkis of each.
- Heat the oil in a pan and cook each tikki using little oil till they become crisp and golden brown from both the sides.
- Serve hot.

7. Amla ka Juice (Gooseberry Juice)
Ingredients for Amla ka Juice
- 4 medium sized carrot , (unpeeled) , cut into cubes.
- 2 medium sized orange , seperated into segments.
- 2 amlas (indian gooseberries) , deseeded and cut into pieces.
- 2 tbsp powdered sugar.
How to make Amla ka Juice (Gooseberry Juice)
- Combine all the ingredients with 1 cup of cold water in a mixer and blend till smooth.
- Strain the juice using a strainer or a muslin cloth.
- Add some crushed ice into 4 individual glasses and pour the juice over it.
- Serve immediately.
