Roast Vegetable and Hummus Pizza (vegan and dairy-free)


I had you at pizza didn't I?

If you're anything like us you love pizza. Our standard choice is a Margherita pizza with added veggies, but today we decided to try something different and went for a blond pizza with roast vegetables and hummus.

The truth is we've had pizza twice this week. Cooper wanted to make pizza from scratch so he and I both worked on a dough and we ended up with too much pizza for one night.

The first night we had it our favourite way. Our homemade thin pizza base, topped with my whizz bang pizza (blender) sauce, then mozzarella (vegan for Graham) and lots of veg. Cooper had sweetcorn on his, he likes to keep it simple.

The second night I spread the pizza base with a thick layer of hummus, topped it with lots of freshly roasted vegetables, a sprinkle of oregano, paprika and black pepper and a drizzle of olive oil. It was actually really good!




How do you eat pizza?


Now there's a question. Do you.......

  1. Eat a whole pizza
  2. Eat a slice with salad
  3. Eat a slice with a baked potato and salad
  4. Just eat a slice (because you are a control freak, well come on you must be)
  5. Eat a whole pizza with a fork and knife
  6. Slice a whole pizza and eat it with your fingers
  7. Slice a pizza and share it

Call me a freak, but I like to eat a whole pizza (no sharing, sharing you're kidding aren't you), not a massive one you understand, just a thin one, the size of a plate and I like to use a fork and knife.



Yes, I know you've seen that photo of me stuffing a pizza in my mouth and no fork or knife in my hand, but that was just for the photo, when the camera was turned I probably got my knife and fork out.

Yeah, so occasionally we have a takeaway pizza that's already sliced and I eat it with my fingers out of the box, but if I'm in a restaurant or if I've cooked it at home I like to use a knife and fork. 

And you know what drives me freaking crazy?


Blunt knives that won't cut through the damn pizza! I don't have that problem at home because I have sharp pizza knives, but when you're in a restaurant and they hand you a bloody butter knife and expect you to cut through the pizza with it....... GRRRRRRR!!!!!!!!!!!!

Roast Vegetable and Hummus Pizza


A homemade white pizza with hummus in instead of tomato sauce, roast vegetables, herbs and spices. Suitable for a vegetarian, vegan or dairy-free diet.
Ingredients
  • 2 yellow bell peppers, cut into chunks
  • 2 small courgettes, sliced
  • 2 red onions, halved and cut into wedges
  • a drizzle of olive oil
  • 1 portion pizza dough (you could also use naan bread or pitta bread as a base)
  • 300g hummus
  • 2 ripe salad tomatoes, cut into wedges
  • 1 tsp dried oregano
  • a generous pinch of paprika
  • a good grinding of black pepper
  • a few sprigs of fresh coriander to serve
Instructions
1. Heat oven to 240C/fan 220C /gas 8. 2. Toss the vegetables in a little oil and spread across a roasting tin, then roast for 20 minutes. 3. Roll out the dough into two bases and place on two floured baking trays.4. Spread hummus across each base, leaving a border.5. Top with the vegetables and tomatoes and sprinkle some oregano and paprika across each pizza, then season with black pepper. Finish with a drizzle of oil.6. Bake for 12 - 15 minutes until golden and crisp.7.Enjoy!
