My favourite quick lunch (that isn’t a sandwich) + IMK March 2014

It’s the middle of March already – wow. This year is flying by!

Well, a new month means a new In My Kitchen post to share goodies I have been sent. Now, I have to admit that I have been sent quite a few things recently, but I only like sharing things I genuinely loved so only two gifted products have made the cut. Ouch, harsh Christie!

First up is my Favourite Quick Lunch (that isn’t a sandwich). It’s a cold pasta salad made with fresh tomatoes, tinned tuna in olive oil, chives (or spring onion), olives, goats cheese (or fetta) and lemon juice. Delicious!

To make is SUPER speedy, simply boil the pasta when you are cooking dinner, then drain and mix with a little olive oil and whack into the fridge. Then, the next day, you simply dump in the tin of tuna and all the other bits and bobs – and Lunch is done!

This is an embarrassing thing to admit, but I even cut all the ingredients up in stages – I’m THAT time poor. I quickly dice the tomato while chopping up a snack for Poppy and throw it into the bowl with the pasta. Or I snip a few chives with my trusty kitchen scissors while waiting for the kettle to boil. Just stealing a few seconds every now and then throughout the morning adds up to a Quick squeeze of lemon at lunch time and I’m ready to eat (standing up, one handed, holding a baby). Relaxing!

This week it included pasta from Barilla* – a new fancy range they are calling La Collezione D’Italia. I just love the orecciette shape for this salad (it means ‘little ears’ in Italian) as the ears help scoop up bits of tuna and tomato.

Everyone loves a bit of Manu, no? That French accent gets me every time, sooo nice!

I’m not really into celebrity cookbooks being thrown out on the back of TV shows, but hey – this one is pretty nice and beautifully shot. AND, it’s French for Everyone* – which is good, because these days I barely have time to make myself lunch let alone long laborious French recipes. No matter how delicious.

I made this smoked rainbow trout and cucumber salad, but I used hot smoked salmon and it was divine (and quick!). It had a lovely dressing made from creme fraiche and Dijon mustard, as you’d expect, and Manu says his mum used to make it for him, awww.

I am excited to try this one – isn’t the photo luscious? Red wine poached eggs. Yum!

Also in my kitchen are tomatoes grown by a local crazy Irish man, honey from bees that have eaten from macadamia blossoms (so good!) and a gluten free protein bread mix that I heard about from Nikki at Styling You – if you need some fashion advice, click on over.
