Ingredients
Cookie Ingredients
- 1 ½ sticks unsalted sweet cream butter (room temp)
- ½ cup light brown sugar (packed)
- ½ cup white sugar
- 1 egg (large)
- 1 Tbsp pure vanilla extract
- 2 cups all-purpose flour
- 2 tsp cornstarch
- 1 tsp baking soda
- ¼ tsp salt
Frosting Ingredients
- 8 oz cream cheese (room temp)
- 1 ¼ cups confectioners sugar
- 1 tsp pure vanilla extract
- ¼ cup white sugar
Instructions
Cookie Instructions
Preheat the oven to 350 degrees F.
Line two cookie sheets with parchment paper.
Add ¼ cup of white sugar to a small bowl and set aside.
Place the butter, brown sugar and white sugar in a mixing bowl.
Use an electric mixer to cream the dry ingredients together for 3-4 minutes.
Add the egg and vanilla extract to the bowl and mix until combined.
Place the flour, cornstarch, baking soda, and salt in a large glass mixing bowl and whisk to combine.
Slowly add the dry ingredients to the wet ingredients, a little at a time. Mix with an electric mixer after each addition.
Continue to mix until the dough is smooth.
Use a 35 mm cookie scoop (one tablespoon of cookie dough) to make dough balls.
Place each dough ball on the parchment lined cookie sheet.
Flatten each dough ball with a ¼ cup measuring cup.
Bake at 350 degrees for 9-10 minutes, or until the cookie edges start to brown.
Remove the cookies from the oven and allow to cool on the rack for 2-3 minutes.
Transfer the cookies to a cooling rack to cool completely.
Frosting Instructions
Place the cream cheese into a mixing bowl.
Beat the cream cheese with an electric mixer until it becomes smooth.
Continue to mix while adding in the confectionery sugar and vanilla extract.
Beat the frosting until the mixture is smooth.
Top each cookie with a tablespoon of frosting.
Follow up by pressing each frosted side of the cookie in the bowl of sugar.
Set the cookies aside.
To add a special finishing touch, use a kitchen torch to caramelize the white sugar on the top of each cookie. Carefully move the cookies to a cooling rack until serving.
