This homemade cookie recipe is perfect for you! They’re the perfect mix of crispy and chewy, with a delicious red velvet flavor. Plus, they’re decorated in a festive Mickey Mouse design!

Here’s how to make them.

Equipment Needed

  • 2 cookie sheets
  • parchment paper OR silpat baking sheets
  • stand mixer OR hand mixer and large glass mixing bowl
  • medium glass mixing bowl
  • measuring cups
  • measuring spoons
  • whisk
  • cutting board
  • 1 – 2 in Mickey Mouse head shaped cookie cutter 
  • 1 disposable piping bag 
  • cooling racks

Ingredients 

  • 1 cup unsalted sweet cream butter, softened 
  • 4 oz cream cheese, softened 
  • 1 cup sugar 
  • 1 large egg yolk 
  • 2 tsp pure vanilla extract 
  • 3 tsp red gel food coloring 
  • 3 ¼ cups flour 
  • ¼ cup cornstarch 
  • ¼ cup hershey cocoa powder 
  • ½ tsp salt 
  • 1 cup Ghirardelli milk chocolate melting wafers 

Instructions

Preheat the oven to 350 degrees F.

Line two cookie sheets with parchment paper or silpat baking sheets.

Place the flour, cornstarch, cocoa powder and salt into a medium glass mixing bowl and whisk together.

Use a mixer to beat the butter, cream cheese and sugar until combined, smooth and fluffy 

Beat in the egg yolk, vanilla and red food coloring.

Gradually beat in the dry ingredients until the mixture is combined and a dough forms.

Sprinkle flour onto a cutting board or other work surface.

Roll the cookie dough out until it’s 1/4 inch thick.

Use the Mickey cookie cutter to cut out the cookies.

Place the unbaked cookies onto the cookie sheets.

Bake in the oven for 12-14 minutes or until set around edges.

Remove the cookies from the oven.

Place the cookies onto cooling racks and allow them to cool completely.

Melt the Ghirardelli melting wafers.

Spoon the melted chocolate into a piping bag.

Cut the tip off of the piping bag and drizzle the chocolate over the cookies.

Sprinkle the cookies with some Valentine’s Day sprinkles.

Serve and enjoy!
