  • measuring cups
  • measuring spoons
  • whisk
  • cooling rack

Ingredients

Pie Ingredients

  • 1 refrigerated ready to bake pie crust
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 cups eggnog
  • 1/2 cup unsalted butter, cubed
  • 1 teaspoon rum extract
  • 1/2 teaspoon nutmeg

Eggnog Sour Cream Topping Ingredients

  • ¾ cup sour Cream
  • 3 tbsp sugar
  • 3 tbsp eggnog
  • cinnamon to sprinkle on top

Instructions

Preheat the oven to 375 degrees f.

Add the sugar and cornstarch to a small saucepan and stir to combine.

Whisk in the eggnog until smooth.

Bring the mixture to a low boil.

Reduce the heat and cook for 2 minutes, stirring constantly.

Remove the saucepan from the heat; add in the butter and extract.

Stir until the butter is melted and smooth.

Pour the pie mixture into the pie crust.

Bake for 20-25 minutes.

Place the sour cream, eggnog, and sugar into a medium bowl and whisk together until combined and smooth.

Remove the pie from the oven and turn the oven heat up to 400 degrees f.

Evenly spread the sour cream layer on top of the pie.

Place the pie into the oven and bake for an additional 10 minutes.

Remove the pie from the oven and place onto a rack to cool off.

Sprinkle some cinnamon on top of the pie.

Serve and enjoy!
