Easy Pumpkin Pancake Recipe That You Can Make in Under 30 Minutes!

Kids need healthy meal options every now and then for their required nutrients. Compared to regular pancakes, Pumpkin pancakes are healthy and delicious alternatives. They are abundant in fiber and Vitamin A. They are also delicious in taste, so kids will love them.

  • Dietary Fiber 0.6gm.
  • Potassium 140mg.
  • Sodium 293mg.
  • Sugars 3.8gm
  • Total Carbohydrates 21gm.

Preparation and cooking time: 20 minutes.

Pumpkin Pancake Recipe

Required Ingredients:

For the batter:

  • Whole wheat flour- 1cup
  • Pumpkin Puree- ½ cup.
  • Milk- 1 cup
  • Natural Sugar/ Brown Sugar- 2 Tablespoons
  • Ground allspice- ¼ teaspoon
  • Ground Cinnamon – ¼ teaspoon
  • Ginger powder- 2 pinches
  • Baking powder- 1 Teaspoon
  • Salt- 1 pinch.
  • Vanilla essence (Optional )- ½ teaspoon.
  • Oil- Sunflower/ neutral tasting oil- 1 Tablespoon

Cooking Instructions:

  • Using a whisk, mix all the dry ingredients in a separate bowl.
  • Now add the Pumpkin puree with this mixture and gradually whisk it.
  • Add the milk, oil, and vanilla essence to the mixture and mix them well.
  • Check if the batter is smooth and flowing. The batter should be in medium consistency. For any alterations, use the milk and wheat flour to adjust them. For example, add milk if the batter is too thick and wheat flour if it is too runny. Make sure to add them gradually to avoid too much of the batter in the end.
  • In the stove, heat a pan on medium heat. Ensure the pan is oiled before pouring the batter, so the pancake does not stick.
  • Using a ladle, pour the batter as per your required size. This batter will spread on its own, so you need to spread it manually.
  • Drizzle oil when the pancake is slightly cooked, and when it turns golden brown, gently flip it and let it cook on that side.
  • The pancake is ready when the other side is cooked to a golden brown. Please remove it from the pan and serve it on a platter.
  • Combined with honey or Maple syrup, they taste the best.

Note: To make Pumpkin puree- Peel off the pumpkins’ skin and cut the flesh into cubes of the desired size. Now cook/boil them in a pan or a pressure cooker with little water. Remove the pan and let it cool down, then grind the mixture using a blender or mash them to make a fine paste.
