Rajgira Kheer/ Amaranth pudding recipe

Rajgira kheer is a calcium-rich kheer that is suitable for kids. It is made with Amaranth grains, milk, and nuts. It can be given as a dessert or an evening snack.

Nutritional value:

  • 13.44 grams protein
  • 5.3 grams fat
  • 4gms of Fibre
  • 303 mg of calcium
  • Also contains Manganese, phosphorous, iron, copper, magnesium, selenium, potassium, sodium, and zinc.

Preparation and Cooking time: 25 minutes

Required Ingredients:

  • Popped Amaranth grains: 1 Cup
  • Almonds: 4-6
  • Cashews: 4-6
  • Raisins: 4-6
  • Elaichi powder: ¼ tsp
  • Milk: 1.5 cups
  • Ghee/ Clarified butter: 2 tsp
  • Sugar/ Jaggery/ Brown sugar: 3 tsp

Cooking instructions:

  • In a thick saucepan/thick-bottomed vessel, boil the milk on a medium flame.
  • Add the popped amaranth grains into the milk vessel when the milk is boiled.
  • Stir the grains and milk well for five minutes on a low flame. By this time, the kheer will become thick in consistency.
  • By stirring it occasionally, avoid getting lumps or sticking to the vessel’s bottom.
  • Add the sweetener, whichever you have chosen from the above, and the elaichi powder.
  • Let it boil on the low flame for 3 to 4 minutes, and stir it occasionally.
  • Add 1 tsp of ghee to a separate pan and roast the raisins, cashew nuts, and almonds. When the nuts turn a golden color, switch off the flame.
  • Now add the roasted nuts and raisins to the kheer and serve warm.

Note: When the kheer is cooled down completely, it becomes thick; warm milk can be added to adjust the consistency. Healthy and tasty Amaranth Kheer is ready now.
