Agar Agar / China Grass Pudding Recipe

Today we are gonna make delicious China grass (agar agar) pudding. To prepare this jelly-like and glittering pudding, only a few basic ingredients are required. Both children and adults will like this pudding because of its flavor and texture. You should definitely give it a try, if you have a sweet craving!

Ingredients required: (Serves 4-5)

  • Milk – 0.5 Litre
  • Sugar – 3 to 5 tbsp
  • China Grass – 10 gms

Details:

  • Prep Time – 30 minutes
  • Resting Time – 4 to 5 hours
  • Servings – 10 to 15 Pieces

Step by step instructions:

  • The china grass should first be cleaned, sliced into pieces and soaked in water for about 20 minutes.
  • While that’s happening, heat up 0.5 litres of milk for a minute and add sugar to your desired sweetness. (Do not over boil the milk; we will re-heat the mixture with china grass)
  • You can also add 1 pinch of powdered cardamom in that milk. And keep the milk aside.
  • Boil the china grass along with the water we used to soak it in, stirring constantly, until the grass is totally melted.
  • Now, we will add the china grass dissolved liquid to the milk.
  • Boil the mixture at a low flame, and whisk it for two to three minutes until it dissolves.
  • Once it dissolves, turn off the stove and let it to cool off for few minutes.
  • Finally place the mixture in the refrigerator for 4–5 hours.
  • After that, you can cut the pudding into any shape you choose.

Tips:

  • Cut the pudding into various shapes, such as a diamond, heart, oval, and so on, for children who enjoy shapes.
  • You may make it more colorful by replacing the milk with water. Add food coloring to the mixture to make it colorful before allowing it to settle.
  • This can be topped with tutti frutti, chopped nuts like Cashews and Pista, etc.

Health benefits:

  • There is evidence that China grass can help with type 2 diabetes symptoms. China grass improves the stomach’s ability to absorb glucose and moves swiftly through the digestive tract, which may help manage insulin resistance.
  • Since ancient times, China grass has been used to treat infant jaundice. The gelatinous substance is supposed to work by absorbing bile to lower bilirubin levels in young children.
  • It is particularly useful in cases of painful constipation, assisting in the smooth evacuation of waste without putting strain.

Note:

  • When kept in the fridge, the pudding and toppings are good for a week.
  • Even though it has numerous health benefits, too much consumption is not advised.
  • To suit your preferences, adjust the sugar amount. Toppings are optional.
