There are many hawkers selling oyster omelette at Old Airport Road Hawker Centre. My favourite oyster omelette from this humble store at Xing Li Cooked Food. The uncle is on a one man show. He does everything from preparing to cooking oyster omelette to collecting payment. The queue is always long during peak hours. And the queue is horrible over the weekends. Be prepared to wait for at least 40 minutes. It’s also time to watch the live demo on how to cook a plate of delicious fried oyster omelette. The uncle would cook the egg and runny batter first for a fluffy omelette before placing the raw oysters set to cook for few minutes.

The actual final product is where the oysters were buried deep in the fluffy omelette as shown in the picture below. The reason why I prefer Xing Li Fried Oyster Omelette is because of the fat, fresh and juicy oysters on delicious and fluffy omelette. The oysters were well-cooked, not too dry nor shrink in size.  The chilli sauce was not too spicy. It blends well with the oyster omelette.

Whats the difference between Oyster Egg and Fried Oyster Omelette? Runny batter is not added for Oyster Egg. What you get for Oyster Egg is 100% egg and oysters. However, you may have to wait for a second of queue for your Oyster Egg. The uncle cooks Oyster Egg separately from Fried Oyster Omelette. The waiting time can go up to 1 hour and more. In my humble opinion, I think the Fried Oyster Omelette is good enough. It is all the experience, effort and fresh ingredients that counts.
