Christmas recipe: lobster with caviar

Did you already choose the music for your magical evening? Your guests are enjoying themselves, merrily chatting away with one another: now is the perfect time to surprise them with your next course. Bring out the star of the show, knowing they will never forget this dish: lobster with Caviar.

Lobster with caviar

Ingredients

Lobsters
Fresh Calvisius Oscietra Royal caviar
White wine
Bouquet garni
Butter or Calvisius’ butter cream with caviar
Salt and pepper to taste

Difficulty: Medium
Cooking time: 50 minutes
Caviar type: Calvisius Oscietra Royal

Method

Tie the lobsters to wooden sticks or skewers and boil them in hot water with the bouquet garni for 10 minutes. When they are done, crack open the shells, extract the meat and slice it. Season with pepper and salt and arrange in a pot with butter or Calvisius’ butter cream with caviar and drizzle in some wine to help the cooking process. Place the lobster medallions on plates and top with Calvisius Oscietra Royal caviar.
