Bruschetta Herb Mix Recipe

This dry Italian herb blend contains a little bit of peperoncino, which makes it mildly spicy and very versatile. The easiest way to use it is to combine 1 Tbsp. Bruschetta Herb Mix with 2 Tbsp. of extra-virgin olive oil. Let the mixture sit for at least 30 minutes so the oil absorbs the flavors, then brush it on grilled bread slices, or use it as a marinade to brush on meats, poultry, vegetables or sturdier fish (like swordfish or salmon) before grilling or roasting.
As a dry herb blend, you can add a pinch or two to many foods for an Italian accent – sprinkle over Italian-style pizzas or pastas … add to your favorite tomato/savory sauces … incorporate into salad dressings, or sprinkle over a salad before tossing it … season soups or sautéed foods … For delicious roasted potatoes or root vegetables, sprinkle the herb mix over potatoes/vegetables and season them with salt & pepper; drizzle over all with enough olive oil to coat the pieces lightly and toss altogether. Then oven-roast or grill. You can also add a small pinch to scrambled eggs, or
quiche, or even make an Italian compound butter … so many options!
