Chocolate Chip Walnut Granola Bars

Chocolate Chip Walnut Granola Bars are a healthy homemade snack/treat option that is packed with oats, honey, Walnuts and chocolate chips. These chewy, crunchy and chocolaty bars are the perfect on-the-go after school/office snack. 

Recently we were gravitating towards all sorts of Granola Bars seen in grocery isle as a handy on the go snack. Its convenient and easy to carry granola bar which you can munch on way back from office/school. So I thought why not try these at home. For me oats, chocolate chips and walnuts are a perfect combination to start with. Cant go wrong with these. These bars are super easy to make and stay great at room temperature for weeks (or u can even refrigerate them). Bake over the weekend and you have a snack at hand all week long and its so much more economical to make these at home over buying the store bought ones.

If you are looking for a more indulging treat you can also try this Magic Cookie Bars which are yet another crunchy,chewy and gooey bars made with chocolate chips, coconut and walnuts topped over layer of sweetened condensed milk and graham cracker crumbs. 

Now to the recipe...




Ingredients: (Makes 12 bars)
2 cups old fashioned oats
1/2 cup chopped walnuts
1/2 cup mini chocolate chips
2 tbsp brown sugar (or to taste)
2 tbps milled flax seed (or whole wheat flour or all purpose flour)
1/4 tsp salt
1/4 cup oil (using canola)
1/4 cup honey
1 tsp vanilla extract


Method: 
Preheat the oven to 350F. In a mixing bowl, add all the dry ingredients like oats, milled flax seeds, brown sugar, walnuts, chocolate chips and salt. Give it a good mix using a spatula. Now add the wet ingredients - honey, oil and vanilla extract. 


Mix well using a spatula to ensure that all the wet ingredients coat the dry ingredients properly. Now spray a 8X8 baking pan with some cooking spray and line it with Parchment Paper. Let the parchment paper fold over the edges so that its easy to lift the bars out once they cool. Spray some more cooking spray over the parchment paper. Spread the mixture over the parchment paper evenly using a spatula. Press down to ensure its evenly distributed. Bake at 350F for 30-40 mins (baked mine for 35 mins) let it cool in the pan completely around 1-2 hours before cutting them into 12 bars. 





Notes: 

  • I have used some milled flax-seeds in this recipe for that boost of omega-3. You can skip that and instead use wheat flour or all purpose flour.
  • These bars need to baked properly and cooled completely before cutting them to avoid them from crumbling. If you still find that the bars are crumbling, just refrigerate them for an hour or so and then slice. 
  • Use a very sharp knife to cut these bars. 
  • You can use walnuts or any nuts of your choice. 

That's it, our healthy, chewy and crunchy Chocolate Chip Walnut Granola Bars are ready. Enjoy these on their own or with a glass of cold milk as an after-school/office snack or as quick dessert.
