A light berry cake, Sour and juicy berries are combined with sweet and crispy meringue



Ingredients

  • 100 g soft butter
  • 3 egg yolks
  • 1 dl sugar
  • 3 dl flour
  • filling

  • 2 dl berries. Black or red currant, blueberries
  • 1 dl sour cream
  • starch for frozen berries
  • (sugar)
  • topping
  • 3 egg whites
  • 1 dl sugar

Directions

  1. Beat soft butter and sugar together into a light foam
  2. Add egg yolks one by one, stirring constantly
  3. Add flour gradually while stirring. Pour into greased /baking paper-lined pan ( 20 cm)
  4. Mix berries with sour cream. In case you use frozen, add some starch ( and sugar)
  5. Bake at 200 C for 20 minutes.
  6. Beat egg whites and sugar. begin at a slow speed and gradually move up to high, until the beaters or whisk is lifted out of the egg whites, the peak will stand erect and not bend over.
  7. Cover cake with egg white foam, and bake at 100 C for 30 minutes.
