A light berry cake, Sour and juicy berries are combined with sweet and crispy meringue
Ingredients
- 100 g soft butter
- 3 egg yolks
- 1 dl sugar
- 3 dl flour
- 2 dl berries. Black or red currant, blueberries
- 1 dl sour cream
- starch for frozen berries
- (sugar) topping
- 3 egg whites
- 1 dl sugar

Directions
- Beat soft butter and sugar together into a light foam
- Add egg yolks one by one, stirring constantly
- Add flour gradually while stirring. Pour into greased /baking paper-lined pan ( 20 cm)
- Mix berries with sour cream. In case you use frozen, add some starch ( and sugar)
- Bake at 200 C for 20 minutes.
- Beat egg whites and sugar. begin at a slow speed and gradually move up to high, until the beaters or whisk is lifted out of the egg whites, the peak will stand erect and not bend over.
- Cover cake with egg white foam, and bake at 100 C for 30 minutes.
