Michaelmas Day lamb chops in Yarrow and Cranberry sauce. Mihklipäeva lammas raudrohukastmes.

On 29th of September is St. Michal day, Michaelmas Day. This day was end of the summer working season.
Englishmen used to say ” Every dog has its day”. But Estonians are saying ” Every tup has its Mihklipäev”. This proverb has two meanings. The first one, as in english: all bad things would be punished. And the second is the direct meaning. On St Michal Day usually sheep was killed and  Lamb had for Michaelmas Day, as traditional dish.

Yarrow is very important medicinal plant in Estonian folk medicine.  Estonian healers used and using still yarrow  of quite a broad-range effect, which also helped to regulate metabolism, stimulates digestion and reduces the onset of stomach cramps and helped against cough and colds and so one.

Yarrow is quite bitter and has little bit anise taste. So, be careful with dosing.

A light and delicious Estonian nature-inspired Lamb Chops perfect for a dinner.



Ingredients

  • 380 g lamb chops
  • 3 gloves garlic
  • 2 handful of cranberries
  • 5 tablespoon meadowsweet syrup (or honey)
  • salt, pepper
  • For sauce
  • 50 g butter
  • 2 handful of cranberries, mashed, or cranberry syrup/jam
  • 1 dl meadowsweet syrup
  • 2 dl broth
  • handful of yarrow leaves
  • salt, pepper

Directions

  1. On a large plate, combine mashed granberries, syrup and garlic and season with salt and pepper. Taste. Press lamb chops into mixture and set aside.
  2. In a large skillet over medium heat, heat oil. Add lamb chops and cook 4 minutes per side.
  3. When the lamb has been fried, start making the sauce.
  4. Put butter in the pan, melt. Add marinade leftovers, mashed cranberries, syrup and broth. Mix well. Bring to boil and let boil and reduce. season with salt and pepper. Add chopped fresh yarrow leaves, mix. Serve.
