Flipper’s Is Making Its Debut at Takashimaya Shopping Centre on 6 November 2020

Allow yourself to be charmed by Japan’s iconic Pancake chain, FLIPPER’S. Also seen internationally with outlets in Seoul, Taiwan, Hong Kong and even New York! FLIPPER’S is famed for its ‘miracle’ pillowy soft and melt-in-the-mouth deliciousness. Keeping FLIPPER’S signature experience as authentic as possible, don’t be surprised if you’re served with two forks. Each souffle pancake is so delicate that is recommended to use two forks to tear (instead of using a knife to slice). The cafe is dressed in Flipper’s signature yellow and pale grey with FLIPPER’S fork motif and quirky neon signs with cheeky taglines.

If you’re wondering what’s the recipe and tricks of making ‘miracle’ pancake, check out the show kitchen. Diners can get up close at the making of FLIPPER’S kiseki pancakes.
From light and fruity to decadent chocolate, there’s a pancake for every palette.
Hard to go wrong with FLIPPER’S classic, Kiseki Pancake Plain (S$16.80). You can taste the goodness of the whipped cream on top of the airy souffle pancakes. The whipped cream is made with Canadian pure maple syrup and French butter, leaving a lightly sweet fragrance that lingers in the mouth.
Try Millennial Strawberry (S$20.80) pancake before it’s gone on 30 November. Featuring strawberries sweet and tangy Chitose strawberries, velvety cream cheese, and also homemade strawberry jelly well-cushioned between layers of souffle pancakes.
The demure glass of Rose Strawberry Milk (S$7.90) is packed with rose water, Japanese milk,
strawberries, and homemade strawberry compote, and finally topped with rose petals.
I would prefer the Melona Manpuku (S$5.50), a light sencha that leaves a lightly sweet aroma of Japanese melon after taste. Pssst, there is no sugar added!
Who’s a fan of authentic matcha powder from Japan?
The toppings are quality matcha powder from Kyoto, red bean paste, fresh whipped cream, drizzled with matcha honey, and dusted with Hokkaido kinako or roasted soybean powder. It all results in a delicious and bittersweet piece of Kiseki Pancake Matcha (S$19.80). Pssst, the red bean paste is not as sweet as the ones in Japan.
I can imagine my nephew and niece’s excitement over this Kiseki Pancake Hazelnut Chocolate (S$21.80). The chocolate is made from Valrhona Equatoriale Noire 55 chocolate-infused cream, luscious hazelnut praline, and caramelised bananas crowned with glorious homemade chocolate and feuilletine shard and served with a pool of melted chocolate. The dominant chocolate tastes with a hint of hazelnut and it is not too sweet.
I am impressed with this savoury Eggs Benedict Soufflé Pancake (S$22.80). The kind of eggs that I love! Using Hinata eggs from Kanagawa prefecture, these poached eggs will not disappoint you. One of the savoury pancakes is generously packed with grilled tiger prawns and avocado cubes, while another with Norwegian smoked salmon and sautéed spinach. This savoury dish has helped to draw out more of the egg’s inherent sweetness.
Is it flipping good? Yes definitely!
I’m planning to bring my nephew and niece to Flipper’s in January 2021. Sharing a tip, you may make your reservation at www.q4what.com/flippers. However, the earliest reservation is in January 2021. Fastest fingers win!
