Easy Prawns Curry with Raw Mango

 One of the simplest fish Curry recipe using prawns, raw mangoes and coconut milk.

Ingredients For The Curry:
  1. Small onion (shallots) chopped thinly- 1/4 cup
  2. Thinly chopped ginger-1 tsp
  3. Green chilly split-3 or 4
  4. Prawns cleaned-250 gm
  5. Coconut milk- half of a coconut (about 1 1/2 cups)
  6. Water-about 1/4 cup 
  7. Salt-to taste
  8. Turmeric powder-1/2 tsp
  9. Chilly powder-1 tsp
  10. Coriander powder-1/2 tsp
  11. Chopped raw mango-1 medium
Ingredients for Seasoning:
  1. Coconut oil-1 1/2 tbsp
  2. Fenugreek seeds-1/4 tsp
  3. Shallot chopped-1 tsp
  4. Curry leaves-few
Preparation:
  • In a clay pot or curry pan add ingredients from 1 to 10. Mix it and boil for about 10 minutes.
  • Then add raw mango (peeled) chopped and cook for another 5 minutes.
  • Do seasoning by heating coconut oil in a pan; add fenugreek seeds, followed by shallots and curry leaves.
  • Pour the seasoning in to the curry and cover the curry for 15 minutes.
  • Serve warm with steamed rice and enjoy..
