Bajji Platter

Bajji platter is an easy and quick idea to feed a crowd. You just need to make a simple Batter and can able to make different types of bajji. We can use any veggies of your choice for making bajji's . Boiled egg and paneer squares are also added to this batter.
Ingredients:

  2. Raw plantain/ banana-1
  3. Long Chilly-3
  4. Potato-1 medium
  5. Onion thinly chopped-1
  6. Thinly chopped ginger-1 tsp
  7. Thinly chopped green chilly-1 tsp
  8. Thinly chopped coriander leaves-1 tbsp
Ingredients for the Batter:
  1. Besan flour-1 cup 
  2. Rice flour- 1/2 cup
  3. Turmeric powder- 1/2 tsp
  4. Chilly powder-1 tsp
  5. Hing/kayam-1/4 tsp
  6. Baking soda- a pinch
  7. Hot oil-1 tsp
  8. Salt-to taste
  9. Oil-for deep frying bajji
Preparation:
  • Slightly peel the skin of raw banana and cut them in to thin strips.
  • Cut the long chilly in to two long pieces (optional; or fry as a whole)
  • Peel the skin of potato and cut then in to thin round slices
  • Now mix the ingredients for batter (1-8) in a large bowl; add water little by little and make a thick batter (yet flowing; but thick).
  • Heat a deep pan with oil; dip each of the baji pieces in batter and coat evenly and drop them in to the hot oil.
  • Fry on medium flame until nice golden brown and crisp.
  • Drain in to paper towels.
  • After frying banana, chilly and potato; little batter should be remain there. Add thinly chopped onion, ginger, green chilly and coriander leaves; mix well.
  • Spoon the batter in to hot oil and fry them.
  • Serve hot and crisp in side with ketchup and coconut chutney.
