Serve Up Sweetness With Our Blueberry Crumble

It’s peak season for blueberries, when they are bursting with flavor and nutrition.

One cup of blueberries has just 84 calories, provides 25% of your daily value for Vitamin C, and are a good source of fiber with 3.6 grams1.

While blueberries are delicious on their own, tossed in yogurt or cottage cheese or whirled into smoothies, they also make the perfect summer dessert. Crumbles are a great alternative to pies since they are easy to whip together (no rolling out pie crust required), and since there is no crust, you save a bit on calories and fat. To save even more on calories, swap out the sugar called for with zero-calorie stevia instead.

Blueberry Crisp

Nutrition Information:

Calories 200, Total Fat 4 g, Protein 3 g, Total Carbohydrate 41 g which includes Dietary Fiber 5 g and Total Sugars 19 g (4 g from added sugar).

Makes 6, ½ cup servings

 

Ingredients:

  • 6 cups blueberries
  • 3 tbsp. cornstarch
  • 2 tsp. ground cinnamon (divided)
  • 6 packets of stevia tabletop
  • ¾ cup old-fashioned oats
  • ¼ cup oat flour
  • 2 tbsp. pure maple syrup, room temperature
  • 1 ½ tbsp. unsalted butter, melted

Steps:

  1. Preheat the oven to 350°F.
  2. Coat an 8’’ square pan with butter or non-stick spray.
  3. In a medium bowl, prepare filling by tossing blueberries, cornstarch, 1 teaspoon cinnamon, and stevia.
  4. Pour contents into prepared pan.
  5. To prepare topping combine oats, oat flour, and remaining cinnamon in a small bowl. Pour in the maple syrup and melted butter. Try to coat oats evenly as possible. Sprinkle topping evenly on top of filling.
  6. Cover the pan with aluminum foil and bake covered for 20 minutes at 350°F and then uncover and bake for an additional 20 minutes or until bubbly and topping is toasty.
  7. Serve warm; top with vanilla ice cream for an extra treat.
