You need four things for the recipe:

Noodles:

  • Glass noodles: 10 ounces (283 grams)

While traditionally it is prepared with sweet potato noodles but I am going to use glass noodles. Here is a thing you can use any noodles you like. Noodles provide the main structure of the dish.

Sauce:

While sauces have many variations. These are the ingredients I normally use to make sauce for my Japchae recipe vegetarian version.

  • Sesame Oil:1 tablespoon

It gives the nutty flavor and aroma to the sauce.I use toasted sesame oil for sauce because it gives strong flavor. It is brown in color. You may also use grapeseed oil or olive oil as a substitute.

  • Brown Sugar: 2 tablespoons

I am a fan of mixed spicy and sweet flavors. So, this ingredient is must for me. Honey or maple syrup can be used as substitutes. It balances the savory flavors with a hint of sweetness.

  • Garlic (Minced): 2 cloves

You must know the aroma and flavor of garlic. I use it in my sauce for that. As a substitute Garlic powder can also be used but it is clear that it would give slightly different results.

  • Ginger (Minced): 1 teaspoon

It would add a warm flavor to your japchae recipe vegetarian version. As a substitute use Ginger powder or if you don’t like it minced you can use it in ground form. But, because I belong to an Asian family, I love spices and I have them at my place every time I would use minced ginger. It gives a crunch you know.

  • Rice Vinegar: 1 tablespoon (optional)

Rice vinegar is available easily at stores. If you don’t have it and you want that taste don’t worry. As a substitute use Mirin. If you don’t have both just skip this one.

Veggies for Japchae Recipe Vegetarian Version:

Now comes the veggies part. Here is list of vegetables I am going to use for the Japchae recipe vegetarian version.

  • Shiitake Mushrooms (Dried): 1 ounce (28 grams)

They add an earthy and umami flavor. If you are taking dried shiitake mushrooms soak them in hot water. If you don’t have enough time you can use fresh shiitake mushrooms. I use Shiitake mushrooms because they are more flavorful but if you can’t find them as a substitute you can use any other mushrooms.

  • Carrots: 1 large carrot (peeled and julienned)

It gives a good color, sweetness and crunch to your Japchae recipe vegetarian versions. Daikon radish can be a good substitute of carrot.

  • Spinach: 1 bunch

It adds a beautiful green color to you Japchae recipe vegetarian version and also a great source of nutrition. As a substitute you can use Kale also.

  • Red Onion: 1 (thinly sliced)

You can use shallots or white onions as substitute. Both can go well for vegetarian Japchae. I like to use red onions because they add a pop of color and a balanced flavor.

  • Red bell pepper: 1

Who don’t love red bell pepper? Cut it into thin strips. You can substitute it with any other bell pepper but red one has a slightly sweet taste so I prefer this one.

Garnishing to Use for Japchae Vegetarian Twist:

  • Sesame seeds: 1 tablespoon

Instructions or Japchae Recipe Vegetarian Version

Prepare the Sauce:

  • In a small bowl, whisk together the sesame oil, brown sugar, garlic, ginger, and rice vinegar.

Prepare the veggies:

  • Soak the shiitake mushrooms in hot water for 10-15 minutes or until softened. Drain and slice thinly. I sauté them in a hot pan with a drizzle of sesame oil before slicing them to enhance the flavor of the shiitake mushrooms.
  • Julienne the carrots using a vegetable peeler or mandoline. Wash and chop the spinach into bite-sized pieces. Thinly slice the red onion. Cut the green onions into small pieces.
  • Heat a large skillet or wok over medium-high heat. Add a drizzle of sesame oil.
  • Add the shiitake mushrooms and carrots to the pan and stir-fry for 2-3 minutes or until softened.
  • Add the spinach, red onion, and green onions and stir-fry for 1-2 minutes or until wilted.
  • Remove the veggies from the pan and set aside.

Prepare the Noodles:

  • Cook the glass noodles according to the package directions. I add a dash of sesame oil to the water when cooking the glass noodles to prevent them from sticking. Drain and rinse thoroughly.

Assemble:

  • In a large bowl, combine the cooked glass noodles, sauce, cooked veggies, and sesame seeds.
  • toss well to combine.
  • Serve warm or at room temperature.
