Lemon Cilantro Noodles – A quick, easy-to-make noodle recipe! Made with zesty lemon juice, fresh cilantro leaves, and a handful of flavorful seasonings.

You can enjoy it as a perfect quick snack or even as a quick weeknight meal. It’s a versatile recipe with simple ingredients.

It’s also very easily customizable – add protein, veggies, or seasonings of your choice for a personalized dish!

  • Noodles of your choice
  • 1/4 cup Cilantro / Coriander leaves chopped
  • 1/2 tsp Chili flakes
  • 2 tbsp chopped shallot/onion
  • 1 tbsp minced garlic
  • 1 tbsp Dark soy sauce
  • 2 tbsp Lemon / Lime juice
  • 1 tbsp Black pepper sauce or chili sauce
  • A pinch of sugar

To begin, read the instructions on the packaging of your chosen noodles. Prepare the noodles according to these instructions. I slightly undercooked the noodles until they were chewy.

Once the noodles are cooked, rinse them under cold water and then set them aside.

Finely chop the onions or shallots, and cilantro/coriander leaves, and mince the garlic cloves to make the seasoning.

Transfer them to a large heat-proof bowl or a shallow plate. Also, add the chili flakes and a pinch of sugar and salt.

Heat oil in a pot on medium or medium-high heat. It will take around 3 to 4 minutes. Once you start seeing small bubbles, the oil is ready.

To check, you can add a small piece of garlic and if it immediately sizzles, the oil is at the right temperature.

Turn off the heat, and pour the sizzling hot oil over the seasoning mixture.

Add in the dark soy sauce, black pepper sauce or chili sauce, and lemon/lime juice. Mix everything well.

Once the sauce is ready, mix in the cooked noodles. Coat the noodles well with the sauce.

Taste the noodles and feel free to experiment with the sauces and seasonings of your choice.

Finish with some chopped coriander/cilantro leaves and a spoonful of chili oil! Enjoy these delicious quick, easy, noodles!

  • To make it more wholesome, add some protein such as grilled tofu, cottage cheese, chicken, or shrimp into the dish.
  • Make it spicy, by adding more chili flakes or hot chili sauce.
  • Choose noodles of your choice for this recipe such as knife-cut noodles, wheat noodles, rice noodles, zucchini noodles, instant noodles, etc.
  • Try to use fresh lime or lemon juice for the fresh tangy flavor.
  • Top it off with crushed nuts or chili oil crisps to add some crunch.
  • Make it creamy, by adding some grated parmesan cheese.
  • You can also try adding a spoonful of curry powder for a twist.

Equipment

Ingredients

  • 2 nos Noodles Pack 5.2 oz 
  • 1/4 cup Cilantro / Coriander leaves chopped
  • 1/2 tsp Chili flakes
  • 2 tbsp Shallot / Onion chopped
  • 1 tbsp Garlic minced
  • 1/4 cup Oil

Seasoning

  • 1 tbsp Dark soy sauce
  • 2 tbsp Lemon / Lime juice
  • 1 tbsp Black pepper sauce or chili sauce
  • Salt to taste
  • A pinch of sugar

Instructions

Cook the Noodles

  • Cook the noodles according to the package instructions slightly undercook until still chewy.
    2 nos Noodles Pack
  • Drain the noodles and set aside.

Season the Noodles

  • In a heat-proof bowl, combine chopped onions or shallots, chopped coriander leaves, minced garlic, and red chili flakes.
    1/4 cup Cilantro / Coriander leaves, 1/2 tsp Chili flakes, 2 tbsp Shallot / Onion, 1 tbsp Garlic
  • Heat the oil in the pot over medium-high heat for 3-4 minutes or until it becomes hot and you notice small bubbles forming.
    1/4 cup Oil
  • Pour the hot oil over the mixture. Mix everything well.
  • Add dark soy sauce, black pepper sauce or chili sauce, salt, sugar, and lime juice. Mix well.

  • Next, add the cooked noodles and mix to coat in the sauce mixture. 
  • Finish with some chili oil/sauce, if you like!
