A delicious and nutritious vegan dish made from whole green moong dal, cooked in an aromatic onion-tomato gravy with a blend of flavorful spices.

This Mung Bean Curry is a staple in Indian households, and there are various versions of this recipe. Here, I am sharing a simple home-style recipe that can be made with basic ingredients.

It will not only be a tasty addition to your meals but also a healthy choice as moong dal is a great source of protein, fiber, and essential vitamins.

Whole Green Moong Dal, also known as Mung Beans, Sabut Moong Dal, or Green Gram Dal, is considered to be high in fiber and rich in proteins. This aids in digestion and helps maintain a healthy weight.

This dal is also a great source of folate, vitamins, and minerals, and they have a low glycemic index.

Also, compared to other dals (lentils), green moong dal is considered easier to digest.

You will need a handful of simple ingredients to make this delicious Mung Bean Curry. Here is the list of main ingredients of the recipe below:

  • Green Moong Dal – is used in the dish after soaking and cooking. You can buy it from any local Indian supermarket or mainstream stores such as Whole Foods and Costco. You can also buy it from Amazon.
  • Powdered Spices – such as turmeric powder, coriander powder, red chili powder, and garam masala.
  • Aromats & Veggies – that are used to make this dish are ginger-garlic paste, green chilies, onions, and tomatoes.

Step 1 – Rinse the Green Moong Dal

To begin, thoroughly rinse 1 cup of whole green moong dal under running water. Soak the dal in water for at least 2 hours or in hot water for 30 minutes.

Step 2 – Cook the Dal

Drain the soaked dal and add it to a pressure cooker or instant pot. Add chopped green chilies, turmeric powder, oil, and 2 cups of water.

If using a pressure cooker, cook for about 2 whistles or until the dal is soft and cooked through.

If using an instant pot, pressure cook for 8-10 minutes.

Step 3 – Prepare the Tempering

In a separate pan, heat 1 tablespoon of oil or ghee.

Add cumin seeds and let them splutter. Next, add ginger garlic paste and sauté for a minute until the raw smell disappears.

Step 4 – Add the Onions and Tomatoes

Next, add finely chopped onions and sauté until they turn golden brown.

Once the onions are cooked, add chopped or pureed tomato and cook until they become soft and the oil starts to separate.

Step 5 – Add the Spices

Add turmeric powder, coriander powder, and red chili powder. Sauté the spices for a couple of minutes until they become fragrant.

Step 6 – Combine Dal and Tempering

Add the pressure-cooked moong dal and garam masala to the pan and combine everything well.

Step 7 – Simmer the Dal

Season with salt according to your taste. Let it simmer for a few minutes to let the flavors meld.

Step 8 – Garnish the Dal

Garnish the green moong dal with chopped coriander leaves.

Before serving the dal, squeeze fresh lemon juice over the dal to add a tangy kick. Also, add some more freshly chopped coriander leaves.

Serve the Green Moong Dal Curry with fluffy steamed basmati rice or brown rice, alongside creamy yogurt raita or a refreshing green salad or Indian pickles or chutneys.

Pair it with any traditional Indian bread such as naan, roti, or chapati.

  1. Make it even more nutritious by adding some veggies such as green peas, carrots, and sweet potatoes.
  2. Make it more herby by adding mint leaves, chopped spinach, along with coriander leaves.
  3. If not making a vegan version, use ghee (clarified butter) instead of oil.
  4. Make it without soaking the dal by increasing the cooking time. If using an Instant Pot, cook for twelve minutes; whereas, if using a pressure cooker, cook for four whistles.

1. Is it necessary to soak the whole green moong dal?

Soaking the mung beans is not required; it only reduces the cooking time. However, if you have time, soak the moong dal for at least 30 minutes in hot water or 2-6 hours in normal-temperature water.

2. How to store the leftover dal?

Store the leftover dal in an airtight container in the refrigerator, it will stay fresh for 2-3 days. You can also freeze the dal for up to a month.

Before serving the frozen leftovers, defrost and reheat them either in a microwave or on the stovetop. If the dal has thickened, add 2-3 tablespoons of water while reheating.

Ingredients

To Pressure Cook

  • 1 cup green moong dal (whole green gram)
  • 1 no green chili chopped
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon oil
  • 2 cups water

To Temper the Dal

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1 no onion medium-sized, finely chopped
  • 2 nos tomatoes finely chopped
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder adjust to taste
  • 1 teaspoon coriander powder
  • salt to taste
  • 1/4 teaspoon garam masala
  • Fresh coriander leaves for garnish

Instructions

  • Wash the green moong dal thoroughly and soak it in hot water for about 30 minutes.

  • Next, add turmeric powder, red chili powder, and coriander powder. Cook until the oil begins to separate.

  • Add the cooked dal, salt, and garam masala. Mix everything well. Adjust the consistency with water if needed.

  • Let the dal simmer for 5-10 minutes on low heat, and let the flavors meld.
  • Garnish with fresh coriander leaves. Serve hot with rice or Indian bread of your choice.

Notes
