Eggsquis History
Eggsquis is a mid-sized chain in Quebec and Ontario that falls into the moderate price range. As of 2023, there are 40 locations, most of which are in Quebec. Egg dishes, such as bacon and eggs and omelettes, are the restaurant’s specialty.
In 1995, Elias Stergiou founded the very first Eggsquis establishment in Sherbrooke. Eggsquis was taken to court in 2010 by the proprietors of the restaurant chain Chez Cora, who claimed that some of the meals served at the Mascouche site of Eggsquis had been plagiarized from Cora’s, including the names of the dishes.
