Corn and Spinach Cheese Sandwich Recipe - A Flavorful Twist on a Classic

Ingredients:

  • Butter 2-3 tbs
  • Garlic chopped 1/2 tbs
  • Corn kernels boiled 1 Cup
  • Baby spinach chopped 200g
  • All-purpose flour 2 tbs
  • Red Chili Crushed 1 tsp
  • Salt 1/2 tsp or to taste
  • Black pepper powder 1/2 tsp
  • Cumin seeds roasted and crushed 1/2 tsp
  • Olper’s Milk 1 Cup
  • Fresh basil leaves chopped 1/2 tbs
  • Olper’s Mozzarella cheese 1/2 Cup
  • Bread slices large
  • Olper’s Cheddar cheese slice
  • Butter 1/2 tbs
  • Garlic chopped 1/2 tsp
  • Red chili crushed 1 pinch (optional)
  • Butter 1/2 tbs
  • Garlic chopped 1/2 tsp
  • Red chili crushed 1 pinch (optional)

Recipe:

In a frying pan, add butter and let it melt. Add garlic, corn kernels, mix well and cook for 3-4 minutes. Add spinach and sauté until spinach is wilted (6-7 minutes).

Add all-purpose flour, red chili crushed, salt, black pepper powder, cumin seeds, mix well and cook for 1-2 minutes. Add milk and mix well. Add fresh basil leaves, mix well and cook on medium flame until it dries up (4-5 minutes). Add mozzarella cheese and turn off the flame, mix well and set aside. Cut the sides of bread slices. Add prepared filling, spread evenly and place cheddar cheese slice and covered with another bread slice to make a sandwich. 

In another frying pan, add butter and let it melt. Add garlic and mix well. Sprinkle red chili crushed, place sandwich and cook one side on low flame until golden and crispy. Add butter, garlic, red chili crushed, flip the sandwich and cook other side until golden & crispy (makes 4).

When the sandwich is well cooked and the cheddar is liquefied, eliminate it from the frying pan. Allow it to cool briefly to avoid burning your mouth. Cut the sandwich in half diagonally, and it's fit to be served.
