  • 3 tablespoons (45 ml) olive oil

  • 1 small onion, diced

  • 1 red bell pepper, diced

  • 1 cup (150 g) corn kernels (fresh or frozen)

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp chilli powder

  • Salt and pepper to taste

  • 6 flour tortillas

  • 3 cups (340g) shredded cheese (such as Monterey Jack or cheddar)

  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro

DIRECTIONS

  • Heat the olive oil in a pan or skillet over medium-high heat. Season the diced chicken breasts with salt and pepper.
  • Place the chicken in the skillet and cook for about 2-3 minutes on each side, or until they are cooked through and no longer pink in the center.
  • Remove the cooked chicken breasts from the skillet and let them rest for a few minutes.
