Let's dive into this delightful Chicken Pasta recipe that will have your kids asking for seconds!

Ingredients:

  • 250g pasta (such as fusilli or penne)
  • 2 boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup chopped vegetables (bell peppers, broccoli, peas, etc.)
  • 1 cup cherry tomatoes, halved
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil leaves, chopped (optional)

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the Chicken:

    • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken and season with salt and pepper. Cook for 5-7 minutes or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.
  3. Make the Sauce:

    • In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another 1 minute until fragrant.
  4. Combine Ingredients:

    • Stir in the chopped vegetables (bell peppers, broccoli, peas, etc.) and cherry tomatoes. Cook for 3-4 minutes until the vegetables begin to soften.
  5. Add Chicken and Pasta:

    • Return the cooked chicken to the skillet. Pour in the chicken broth and heavy cream. Bring the mixture to a simmer.
  6. Simmer and Season:

    • Let the sauce simmer for 5-7 minutes until slightly thickened. Stir in the grated Parmesan cheese until melted and well combined. Season with additional salt and pepper to taste.
  7. Combine Pasta and Sauce:

    • Add the cooked pasta to the skillet with the sauce. Toss well to coat the pasta evenly with the creamy sauce and chicken mixture.
  8. Serve:

    • Garnish the chicken pasta with chopped fresh basil leaves, if desired. Serve hot and enjoy as a nutritious breakfast option for kids.

      Tips:
  • You can customize the vegetables based on what your kids like or what you have on hand.
  • Feel free to substitute chicken with cooked turkey or shredded rotisserie chicken for a quicker option.
  • Leftovers can be refrigerated and enjoyed the next day. Reheat gently on the stove with a splash of broth or cream to revive the sauce.
