Instructions

  • Preheat your oven to 325°F (160°C). Line a mini cheesecake pan with removable bottoms or use a regular muffin tin lined with paper liners.
  • In a mixing bowl, combine the chocolate cookie crumbs (or graham cracker crumbs), melted butter, and granulated sugar for the crust. Mix well until the crumbs are evenly coated.
  • Press about 1 tablespoon of the crust mixture into the bottom of each cavity in the pan, using the back of a spoon or your fingertips to create an even layer. Set aside.
  • In a separate mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy. You can use an electric mixer for this step.
  • Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract, cocoa powder, and sour cream (or heavy cream). Continue to beat until all the ingredients are well combined and the mixture is smooth.
  • Spoon the chocolate cheesecake filling into each cavity, filling them almost to the top. Smooth the tops with a spatula.
