Equipment

  • 1 Blender or Food Processor This is needed to blend the mangoes, coconut milk, sugar, lime juice, and vanilla extract into a smooth mixture.
  • 1 Ice Cream Maker An ice cream maker is recommended to churn the mango mixture and turn it into creamy ice cream. It helps incorporate air and prevents ice crystals from forming, resulting in a smoother texture. If you don't have an ice cream maker, you can use the alternative method mentioned in step 4.
  • 1 Small saucepan This is used to prepare the passion fruit sauce by cooking the passion fruit pulp, sugar, and water.
  • 1 Lidded container You will need a container with a lid to store the ice cream in the freezer while it firms up. Choose a container that can hold the desired quantity of ice cream.
  • 1 Freezer You'll need a freezer to freeze the ice cream until it reaches a firm consistency.
  • 1 Ice cream scoop Optional – This can be helpful for serving the ice cream.
  • 4 Serving bowls or cones You'll need something to serve the ice cream in.
  • 1 whisk or fork Optional – If you're using the alternative freezing method without an ice cream maker, you'll need a whisk or fork to stir the mixture and break up any ice crystals.

Ingredients

For the Mango Coconut Ice Cream

  • 2 ripe mangoes peeled and diced
  • 1 can coconut milk
  • ½ cup granulated sugar
  • 1 tbsp fresh lime juice
  • 1 teaspoon vanilla extract

For the Passion Fruit Sauce

  • 4 passion fruits
  • ¼ cup granulated sugar
  • ¼ cup water

Instructions

  • In a blender or food processor, combine the diced mangoes, coconut milk, sugar, lime juice, and vanilla extract. Blend until smooth and creamy.
  • Pour the mango mixture into an ice cream maker and churn according to the manufacturer's instructions. This usually takes about 25-30 minutes.
  • While the ice cream is churning, prepare the passion fruit sauce. Cut the passion fruits in half and scoop out the pulp into a small saucepan. Add the sugar and water to the saucepan and cook over medium heat until the sugar has dissolved and the sauce has slightly thickened, about 5 minutes. Remove from heat and let it cool.
  • Once the ice cream has reached a soft-serve consistency, transfer it to a lidded container and swirl in some of the passion fruit sauce. Reserve the remaining sauce for serving.
  • Cover the container and freeze the ice cream for at least 4 hours or until firm.
  • When ready to serve, scoop the mango coconut ice cream into bowls or cones and drizzle with the remaining passion fruit sauce.
  • Enjoy your refreshing summer dessert!

Notes

If you don’t have an ice cream maker, you can pour the mango mixture into a shallow dish and place it in the freezer. Every 30 minutes, remove the dish from the freezer and stir the mixture vigorously with a fork to break up any ice crystals. Repeat this process 3-4 times until the ice cream is creamy and frozen.
Feel free to garnish the dessert with fresh mint leaves or toasted coconut flakes for added flavor and texture. Enjoy!
