Ingredients:

1 cup mixed vegetables (carrots, peas, beans, potatoes, cauliflower, etc.)
1/2 cup paneer (cottage cheese)
1 onion, chopped
2 tomatoes, chopped
1/2 cup yogurt
1/4 cup cashews, soaked in water
1/4 cup raisins
2 tbsp ghee or oil
1 tsp cumin seeds
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala powder
Salt, to taste
1/4 cup chopped coriander leaves, for garnish



Instructions:

Heat ghee or oil in a pan over medium heat. Add cumin seeds and sauté until they splutter.

Add chopped onions and sauté until they turn golden brown.

Add ginger paste, garlic paste, and chopped tomatoes. Sauté until the tomatoes are cooked and mushy.

Add turmeric powder, coriander powder, and garam masala powder. Sauté for a minute.

Add mixed vegetables, paneer, and salt. Mix well and cook for 5-7 minutes or until the vegetables are cooked.

Meanwhile, blend soaked cashews and yogurt in a blender until smooth.

Add the cashew-yogurt mixture to the pan and mix well.

Add raisins and let the curry simmer for another 5-7 minutes.

Garnish with chopped coriander leaves and serve hot with rice, roti, or naan.
