At the Paper Moon Cafe, you can get a freshly baked, uniquely Japanese take on French pastries and desserts made with painstaking Asian precision. PaperMoon’s debut coincides with the increasing sophistication of Filipino diners’ tastes and the growing validity of Asian culinary expertise on the global stage.

It’s hard not to drool at the thought of slicing through layers upon layers of handmade crepes that are fresh, delicate, and paper-thin, filled with light pastry cream, and topped with a golden caramelized crust. Twenty (at least!) paper-thin crepes are used to make the Original Mille Crepe, filled with pastry cream and given a mild caramelization on top for a subdued sugar rush.

Madame Kazuko EMI WADA has always had a passion for baking, nurtured by her Austrian mother-in-law and developed during her time in Europe. Before founding her own business, Paper Moon, in 1985, she supplied cakes to seven out of ten of Tokyo’s greatest cafes in the ’70s.

Manila’s PaperMoon Cake Boutique and Cafe, founded in 2015, serves the beautiful cake creations of Madame Kazuko EMI WADA, Tokyo’s Grand Dame of Specialty Cakes, known primarily for the ORIGINAL MILLE CREPE.

Madame Emy Wada’s Original Mille Crepe, which translates to “a thousand crepes” but is more commonly called “Crepe Cake,” is a work of art. There are at least twenty layers of handcrafted crêpes, each as thin as a sheet of paper, filled with a beautiful light pastry cream, and finished with a golden caramelized crust.
