Ingredients

  • 1 cup Arborio rice
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped onions
  • 2 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 tbsp ghee clarified butter
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  • Heat the ghee in a large saucepan over medium heat.
  • Add the cumin seeds and sauté for 1-2 minutes until they become fragrant.
  • Add the onions and garlic and sauté until they become soft and translucent.
  • Add the sliced mushrooms and sauté for 3-4 minutes until they become tender.
  • Add the Arborio rice to the pan and stir to coat the grains with the ghee and spices. Cook for 2-3 minutes until the rice becomes slightly translucent.
  • Gradually add the vegetable broth to the pan, stirring constantly until the rice absorbs the liquid. Continue to add the broth in small amounts, stirring constantly, until the rice is cooked through but still has a slight bite.
  • Stir in the heavy cream and Parmesan cheese until the mixture becomes creamy and smooth. Season with salt and pepper to taste.
  • Garnish with chopped cilantro and serve hot.

Notes

Arborio rice is the best rice for making risotto, but you can also use other short-grain rice varieties.
If you don’t have vegetable broth, you can use chicken broth or water instead.
The risotto may thicken upon standing, so you can add a little more broth or cream to loosen it up.
Leftover risotto can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stovetop with a little broth or water to loosen it up.
